DARING BAKERS JUNE 2011 CHALLENGE: BAKLAVA

Erica di Erica’s Edibles ha lanciato la sfida giugno...pasta fillo fatta in casa per creare una Baklava.
La mia pasta fillo non è venuta un granchè...troppo spessa...ma l'effetto finale non è affatto male!


BAKLAVA


Pasta fillo

INGREDIENTI:
320 ml acqua tiepida
1 cucchiaio di zucchero
1 cucchiaino di lievito secco
2 uova
165 g farina senza glutine


Nella ciotola del mixer unire la farina e il sale
Mescolare con la frusta a foglia. 
Mescolare acqua e lievito in una piccola ciotola.
Aggiungete il composto di acqua e lievito con mixer a bassa velocità, aggiungere le uova e mescolare fino ad ottenere un impasto morbido, se risulta un po' secco aggiungere acqua.
Attaccare ora il gancio per impastare e impastare per circa 10 minuti.
Togliere l'impasto dal mixer e continuare a impastare a mano per 2 minuti.
Forma una palla e coprire leggermente con l'olio.
Coprire bene con la pellicola trasparente e lasciate riposare 30-90 minuti.


Stenderte la pasta fillo

Scartare la vostra pasta e tagliare un pezzo leggermente più grande poi una pallina da golf.
Coprire bene la pasta rimanente.
Infarinare mani, matterello e piano di lavoro.
Appiattire un po' la pasta.
Avvolgere la pasta intorno al matterello.
Rotolare avanti e indietro velocemente la pasta sul mattarello.
Ruotare e ripetere fino a quando non è sottile.
Non preoccupatevi se si creano dei buchi nella pasta, sarà sufficiente un foglio senza buchi, gli altri non si vedranno.
Stendete la pasta fino a quando non è trasparente.
Mettere da parte in una superficie ben infarinata.
Ripetere fino a quando la pasta è esaurita.
Mettere da parte su una superficie ben infarinata.


Per lo sciroppo

INGREDIENTI:
300 ml miele
300 ml acqua
300 ml zucchero
1 stecca di cannella
5 cm scorze di agrumi (limone o arancia)
qualche chiodo di garofano

Unire tutti gli ingredienti in una pentola e cuocere a fuoco medio-alto.
Mescolate di tanto in tanto fino a quando lo zucchero si sarà sciolto.
Far bollire per 10 minuti, mescolare di tanto in tanto.
Togliere dal fuoco, rimuovere cannella, limone e chiodi di garofano.
Lasciare raffreddare.


Per il ripieno

INGREDIENTI:
8 g cannella in polvere
alcuni pizzichi di pimento
200 g mandorle
200 g noci
50 g gocce di cioccolato fondente
150 g zucchero
pasta fillo senza glutine (vedi ricetta sopra)
225 g burro fuso


Preriscaldare il forno a moderato 180°C.
Unire noci, zucchero e spezie in un frullatore e tritare.
Mettere da parte.
Tagliare i fogli fillo da stare in una padella.
Ungere il fondo di una teglioa con burro fuso e mettere il primo foglio fillo.
Spennellare il primo foglio fillo con burro fuso e ripetere 5 volte.
Cospargere con 1/3 della miscela di frutta secca.
Mettere un altro foglio di pasta, imburrare e ripetere 4 volte.
Cospargere con 1/3 della miscela di frutta secca.
Mettere un altro foglio di pasta, imburrare e ripetere 4 volte.
Cospargere con 1/3 della miscela di frutta secca.
Mettere un altro foglio di pasta, imburrare e ripetere 5 volte
Sullo strato superiore, assicuratevi di avere un pezzo di pasta senza buchi.
Una volta messo lo strato superiore, sistemare la pasta lungo i bordi.
Con un coltello affilato incidere la baklava.
Poi spennellare con un generoso strato di burro fuso.
Cuocere in forno per circa 30 minuti, togliere dal forno e tagliare fino in fondo dove prima erano state fatte le incisioni.
Continuare la cottura per altri 30 minuti.
Quando baklava è cotta togliere dal forno e versarci sopra lo sciroppo tiepido.
Sembra che sia molto, ma lo sciroppo penetrerà nella baklava rendendola dolce e gustosa.
Lasciare raffreddare a temperatura ambiente.
Conservare a temperatura ambiente.
Lasciare riposare la baklava tutta la notte per far assorbire lo sciroppo.
Servire a temperatura ambiente

Erica of Erica’s Edibles was our host for the Daring Baker’s June challenge. Erica challenged us to be truly DARING by making homemade phyllo dough and then to use that homemade dough to make Baklava.
My phyllo dough is too thick... but the final effect was delicious!


BAKLAVA


Phyllo Dough

INGREDIENTS:
320 ml warm water
1 tablespoon sugar
1 teaspoon dry yeast
2 eggs
165 g gluten free flour


In the bowl of your stand mixer combine flour and salt
Mix with paddle attachment
Combine water and yeast in a small bowl.
Add water & yeast mixture with mixer on low speed, add the eggs and mix until you get a soft dough, if it appears dry add a little more water.
Change to the dough hook and let knead approximately 10 minutes.
Remove the dough from mixer and continue to knead for 2 more minutes.
Shape the dough into a ball and lightly cover with oil.
Wrap tightly in plastic wrap and let rest 30-90 minutes.


Rolling your Phyllo

Unwrap your dough and cut off a chunk slightly larger then a golf ball.
While you are rolling be sure to keep the other dough covered so it doesn’t dry out.
Be sure to flour your hands, rolling pin and counter.
Roll out the dough a bit to flatten it out.
Wrap the dough around your rolling pin/dowel
Roll back and forth quickly with the dough remaining on the dowel
Rotate and repeat until it is as thin as you can it.
Don’t worry if you get rips in the dough, as long as you have one perfect one for the top you will never notice.
When you get it as thin as you can with the rolling pin, carefully pick it up with well floured hands and stretch it on the backs of your hands as you would a pizza dough, just helps make it that much thinner.
Roll out your dough until it is transparent.
Set aside on a well-floured surface.
Repeat the process until your dough is used up.
Between each sheet again flower well.
You will not need to cover your dough with a wet cloth, as you do with boxed dough, it is moist enough that it will not try out.

For the syrup

INGREDIENTS:
300 ml honey
300ml water
300 ml sugar
1 cinnamon stick
5 cm piece fresh citrus peel (lemon or orange work best)
a few cloves or a pinch or ground clove

Combine all ingredients in a medium pot over medium high heat.
Stir occasionally until sugar has dissolved
Boil for 10 minutes, stir occasionally.
Once boiled for 10 minutes remove from heat and strain cinnamon stick and lemon, allow to cool as baklava cooks.


For the Filling

INGREDIENTS:
8 g ground cinnamon
a few pinches allspice berries
200 g blanched almonds
200 g walnuts
50 g dark chocolate chips
150 g sugar
phyllo dough (see recipe above)
225 g melted butter
Preheat oven to moderate 180°C.
Combine nuts, sugar and spices in a food processor and pulse on high until finely chopped.
Set aside.
Trim your phyllo sheets to fit in your pan.
Brush bottom of pan with butter and place first phyllo sheet.
Brush the first phyllo sheet with butter and repeat approximately 5 times ending with butter.
Sprinkle 1/3 of the nut mixture on top
Continue layering phyllo and buttering repeating 4 times.
Sprinkle 1/3 of the nut mixture on top.
Continue layering phyllo and buttering repeating 4 times.
Sprinkle 1/3 of the nut mixture on top.
Continue layering and buttering phyllo 5 more times.
On the top layer, make sure you have a piece of phyllo with no holes if possible, just looks better.
Once you have applied the top layer tuck in all the edges to give a nice appearance.
With a Sharp knife cut your baklava in desired shapes and number of pieces.
Then brush with a generous layer of butter making sure to cover every area and edge
Bake for approximately 30 minutes; remove from oven and cut again this time all the way through.
Continue baking for another 30 minutes.
When baklava is cooked remove from oven and pour the cooled (will still be warmish) syrup evenly over the top, taking care to cover all surfaces when pouring. It looks like it is a lot but over night the syrup will soak into the baklava creating a beautifully sweet and wonderfully textured baklava!
Allow to cool to room temperature.
Once cooled cover and store at room temperature.
Allow the baklava to sit overnight to absorb the syrup.
Serve at room temperature.

DITELO CON I FIORI...DI ZUCCA

Io non amo ricevere mazzi di fiori...ma se si tratta di un bel mazzo di fiori di zucca le cose cambiano! ;-)

TORTA SALATA ZUCCHINE E GORGONZOLA


INGREDIENTI:
1 rotolo di pasta sfoglia senza glutine
8-10 zucchine piccole con il fiore
100 g gorgonzola
2 uova
30 g latte o panna
aglio
pomodorini
olio extravergine d'oliva
sale
pepe


Pulire le zucchina e tagliarla a tocchettini, poi farle saltare in padella con un filo d'olio e uno spicchio d'aglio.
Pulire i fiori di zucca e aprirli.
in una ciotola sbattere uovo, latte e sale.
Foderare una teglia con carta forno e stenderevi la sfoglia all’interno.
Tagliare il gorgonzola a pezzetti e disporlo sopra alla pasta sfoglia, aggiungere le zucchine, cospargere con il composto di uova e disporre i fiori di zucca aperti, posizionandoli a raggiera.
A piacere aggiungere dei pomodorini tagliati a metà nel centro della torta.
Infornare con forno già caldo a 180°C per 40 min circa o fino a doratura della pasta
Servire fredda o appena tiepida.


ENGLISH VERSION:

ZUCCHINI AND GORGONZOLA QUICHE


INGREDIENTS:
1 rolled gluten freepuff pastry
8-10 baby zucchini with flowers
100 g gorgonzola cheese
2 eggs
30 g milk or cream
garlic
cherry tomatoes
extra virgin olive oil
salt
pepper


Clean the zucchini and cut into slices, then cook them in a pan with a little oil and a clove of garlic.
Clean the zucchini flowers and open them.
In a bowl beat egg, milk and salt.
Line a baking sheet and stretch the dough inside.
Cut the gorgonzola into pieces and place on the pastry, add the zucchini, sprinkle with the egg mixture and arrange the flowers, placing them in a radial pattern.
Add cherry tomatoes cut in half in the center of the cake.
Bake in oven preheated to 180°C for 40 minutes or until golden.
Serve cold or warm.
