COOKIES E PARTENZE (O QUASI)

Estate... momento svuota dispensa prima della partenza!
E allora eccomi a cercare qualcosa che mi permetta di utilizzare alcuni degli ingredienti che stazionano lì nell'armadietto della mia cucina e aspettano di essere utilizzati...
Ho trovato questa ricetta di GialloZafferano, che ho un po' modificato per renderla senza glutine e adattarla a ciò che avevo a disposizione.


COOKIES CON AVENA E GOCCE DI PEANUT BUTTER (O CIOCCOLATO)


INGREDIENTI per circa 40 cookies:
350 g Preparato senza glutine Molino dalla Giovanna speciale per torte e biscotti
100 g gocce di cioccolato, di crema o, come nel mio caso, gocce di peanut butter* (certificate senza glutine)
100 g fiocchi di avena (certificati senza glutine)  
180 g latte condensato (certificato senza glutine)  
225 g burro freddo
150 g zucchero a velo (certificato senza glutine)  
1 baccello di vaniglia
un pizzico di sale

*acquistate nel mio ultimo viaggio negli States... in Italia mai viste purtroppo.


Versare la farina nella ciotola della planetaria insieme al burro freddo a tocchetti, al sale e ai semi della bacca di vaniglia.
Con la frusta a foglia impastare brevemente fino ad ottenere un impasto piuttosto grezzo e sabbioso, poi unire lo zucchero a velo e il latte condensato e azionare di nuovo la planetaria fino ad ottenere un impasto liscio e omogeneo. 
A questo punto unire i fiocchi di avena e le gocce di cioccolato o altro.
Amalgamare velocemente con le mani e formare un panetto; con una spatola dividerlo in 4 parti da 250 g ciascuna e formare 4 filoncini della lunghezza di 15 cm ciascuno.
Avvolgere ciascun filoncino con la pellicola trasparente e farli riposare in frigorifero per almeno 1 ora.


Successivamente con un coltello dalla lama liscia tagliare i filoncini in pezzi dello spessore di 2 cm, poi appiattire delicatamente con le dita la superficie dei biscotti per dare una forma rotonda.
Disporre i biscotti su una leccarda foderata con carta da forno e far cuocere in forno statico preriscaldato a 170°C per 20-25 minuti.
Quando saranno ben dorati, sfornate i biscotti, facendoli raffreddare completamente su una gratella.

Summer ... it's time to empty the pantry before vacation!
So here I am looking for something that allows me to use some of the ingredients that are there in my kitchen cabinet and are waiting to be used...
I found this GialloZafferano's recipe, which I've modified to make it gluten-free and adapt to what I had available.


COOKIES WITH OATS AND PEANUT BUTTER (OR CHOCOLATE) DROPS


INGREDIENTS for about 40 cookies:
350 g Molino dalla Giovanna gluten-free mix for cakes and biscuits
100 g chocolate drops, cream drops or, as in my case, peanut butter drops* (gluten-free certified)
100 g oat flakes (gluten-free certified)
180 g condensed milk (gluten-free certified)
225 g of cold butter
150 g icing sugar (gluten-free certified)
1 vanilla pod
a pinch of salt

* Bought on my last trip to the States ... in Italy never seen unfortunately.


Pour the flour into the planetary bowl with the cold butter, salt and vanilla seeds.
Knead briefly to obtain a rough and sandy mixture, then add the icing sugar and the condensed milk and turn on the planetary to obtain a smooth and homogeneous dough.
At this point join the oats flakes and chocolate drops or other.
Quickly blend with your hands and form a bundle; divide it into 4 parts (250 g each) and form 4 strips with the length of 15 cm each.
Wrap each strand with film and let them rest in the fridge for at least 1 hour.


Use a smooth blade knife to cut the chunks into pieces thickness of 2 cm), then gently flatten the surface of the cookies with your fingers to give a round shape.
Place them on a tray filled with baking paper and bake in a preheated static oven at 170°C for 20-25 minutes, until they are golden.
Let them cool completely on a wire rack.
