SAPORI SEMPLICI

Era davvero ora di iniziare un nuovo anno, pubblicando qualcosa di nuovi.
Voglio iniziare questo 2017 sul blog con una ricetta rustica, di quelle senza pretese, ma con una riuscita sorprendente e goduriosa, un comfort food davvero niente male. Una torta che "arriva dal freddo"... una ricetta scandinava (trovata per caso in questo blog e modificata solo leggermente) che combina perfettamente mele, noci e uvetta per ottenere una torta davvero golosa! 


TORTA SCANDINAVA CON MELE, NOCI E UVETTA


INGREDIENTI per uno stampo da 24 cm di diametro:

300 g farina senza glutine per torte (io ho usato Mix Dolci Shar)
100 g burro fuso, a temperatura
125 g zucchero muscovado
3 uova piccole
5 mele Renette
80 g noci sgusciate
120 g uva sultanina 
50 g Sidro di mele (o succo di mele)
1 bustina di lievito per dolci (certificato senza glutine)
1 cucchiaino di cannella
1 pizzico di noce moscata
marmellata di albicocche (certificato senza glutine)



Mettere a bagno in acqua calda l'uva sultanina per qualche ora, poi lavarla e strizzarla.
Tostare i gherigli di noce e tritarli grossolanamente.
Setacciare e mescolare tutte le polveri assieme, compreso il lievito.
Sbucciare le mele, grattugiarle a fiammiferi e, con un cucchiaio, mescolare il burro fuso tiepido con le mele appena grattugiate, poi aggiungere le uova e tutte le polveri, mescolare fino ad ottenere una purea.
Per terminare, mescolare nell'impasto i gherigli di noce, il Sidro e l'uva.
Versare nello stampo e infornare a 180°C per circa 60 minuti.
A cottura terminata, lasciar che la torta si raffreddi su una griglia, poi spennellare la superficie con marmellata di albicocche calda per lucidare.

I want to start 2017 on my blog with a rustic and unpretentious recipe, but with an amazing and gorgeous successful, really a comfort food. A Scandinavian recipe (found by chance in this blog and changed only slightly) that combines apples, nuts and raisins to get a really delicious cake!


SCANDINAVIAN CAKE WITH APPLES, WALNUTS AND RAISINS


INGREDIENTS for a mold 24 cm in diameter:
300 g gluten free flour for cakes (I used Cake Mix Shar)
100 g butter, melted, at room temperature
125 g muscovado sugar
3 small eggs
5 Renette apples 
80 g shelled walnuts
120 g raisins
50 g Apple cider (or apple juice)
1 teaspoon baking powder (gluten-free certified)
1 teaspoon ground cinnamon
1 pinch of ground nutmeg
apricot jam (gluten-free certified)


Soak the raisins in warm water for a few hours, then wash it and squeeze it.
Toast the walnuts and coarsely chop them.
Sift and mix all the powders together, including baking powder.
Peel the apples, grate them and, using a spoon, mix the warm melted butter with apples freshly grated, then add the eggs and all the powder, stir until smooth.
To finish, add the walnuts, cider and grapes.
Pour into the mold and bake at 180°C for about 60 minutes.
After cooking, allow the cake to cool on a wire rack, then brush the surface with warm apricot jam to shine.
