IL SAPORE DEI RICORDI

A me capita spesso che un sapore o un profumo mi facciano tornare alla mente ricordi di momenti vissuti. Questo è accaduto anche con questi biscottoni, che mi hanno riportato al viaggio della scorsa estate, dove prelibatezze gluten free come queste si trovavano con grande facilità...
Forse la migliore ricetta di cookies trovata finora: croccanti, saporiti e versatili... ho già in mente qualche sostituzione per creare nuove versioni! ;-)

COOKIES AI DUE CIOCCOLATI E NOCCIOLE


INGREDIENTI per 25 biscotti di 10 cm di diametro:

170 g amido di mais (certificato senza glutine)
50 g fecola di patate (certificata senza glutine)
100 g farina di riso (certificata senza glutine)
60 g farina di mais finissima (certificata senza glutine)
5 g xantano
185 g burro morbido
85 g zucchero semolato
85 g zucchero di canna
100 g cioccolato al latte (certificato senza glutine)
100 g cioccolato fondente (certificato senza glutine)
1 uovo + 1 tuorlo
5 g lievito in polvere per dolci (certificato senza glutine)
5 g bicarbonato
un pizzico di sale
80 g nocciole
una bacca di vaniglia



Nella planetaria lavorare il burro morbido, aggiungere i due tipi di zucchero e il sale e lavorarli fino a ottenere una crema.
Sbattere leggermente l’uovo e il tuorlo e aggiungerli al composto, insieme ai semi della bacca di vaniglia.
In una ciotola a parte mescolare gli ingredienti secchi: amido di mais, fecola, farine, xantano, lievito, bicarbonato.
Aggiungere gli ingredienti secchi al composto e mescolare. 
Per ultimo aggiungere il cioccolato a pezzetti e le nocciole tritate con il coltello.
Impastare per bene il tutto, formare un salsicciotto di 10 cm di diametro e riporlo in frigo per almeno 30 minuti avvolto nella carta forno.
Per formare i biscotti tagliare delle fette di circa 5 mm di spessore e posizionarle, un po’ distanziate tra loro sulla carta forno.
Cuocere a 180°C per 25-30 minuti o fino a quando saranno leggermente dorati.

Perhaps the best recipe for cookies found so far: crispy, tasty and versatile... I have in mind some substitution to create new versions! ;-)

DOUBLE CHOCOLATE AND HAZELNUT COOKIES


INGREDIENTS for 25 cookies of 10 cm:
170 g corn starch (certified gluten free)
50 g potato starch (certified gluten-free)
100 g rice flour (certified gluten-free)
60 g fine corn flour (certified gluten-free)
5 g xanthan
185 g soft butter
85g caster sugar
85 g brown sugar
100 g milk chocolate (certified gluten-free)
100 g dark chocolate (certified gluten-free)
1 egg + 1 yolk
5 g baking powder (certified gluten-free)
5 g baking soda
a pinch of salt
80 g hazelnuts
vanilla bean


Whip the soft butter, add sugar and salt and work them until creamy.
Lightly beat the egg and egg yolk and add to the mixture, add also the seeds of the vanilla bean.
In a separate bowl mix the dry ingredients: corn starch, potato starch, flour, xanthan gum, baking powder, baking soda.
Add the dry ingredients to the mixture and stir.
Finally add the chopped chocolate and chopped hazelnuts.
Knead, form a "sausage" of 10 cm in diameter and place in the refrigerator for at least 30 minutes, wrapped in parchment paper.
Cut slices of approximately 5 mm in thickness and put them on the baking tray covered of baking paper.
Bake at 180°C for 25-30 minutes or until they are lightly browned.
