CHE PROFUMINO...COME DAL PANETTIERE!

Da quando ho preparato questo pane per la prima volta è stato subito amore!!! Aspetto invitante, profumo ancora di più...e il sapore è fantastico!!! La prima volta che l'ha visto, mio marito ha commentato "No, questo non può essere senza glutine...sei sicura?"

E questa è la ricetta:


STECCHE DI JIM SENZA GLUTINE



INGREDIENTI:
455 g mix farine senza glutine per pane (variante con Glutafin)
400 g acqua tiepida
6 g sale
3 g zucchero
1 g lievito di birra fresco


Alle 13.00
Ho messo l’acqua dentro una ciotola grande ci ho sciolto il lievito, poi ho aggiunto le farine a cui avevo già mescolato lo zucchero e il sale.
Ho amalgamato tutto con una spatola, anche se non è perfettamente liscio non fa nulla ed ho tappato ed infilato dentro al forno spento.
Ho ripreso l’impasto alle 9.00 del giorno dopo.
Ho preparato un telo di cotone con sopra della carta da forno e l'ho spolverato abbondantemente con farina di mais sottilissima, poi ci ho scaravoltato sopra l’impasto... cadrà facilmente da solo, solo alla fine aiutatevi con la spatola.
Date le pieghe all'impasto: prendere uno dei lembi e ripiegarlo al centro dell’impasto, fare la stessa cosa con gli altri tre lembi, come se piegaste i lati di un fazzoletto portandoli al centro. Poi ribaltate la pagnotta (molto delicatamente) in modo che le pieghe stiano sotto.
Spennellate con olio, cospargete di sale grosso e spolverate di farina di mais prima di chiuderla nel canovaccio
Lasciate lievitare per 2 ore. Mezz’ora prima che finisca la lievitazione arroventate la pietra refrattaria a 250°C.
Tagliate l’impasto in 4 pezzi, con una lama affilata, ed allungateli un po’, molto delicatamente, poi infornate con la carta da forno sotto.
Cuocete per 20 - 30 minuti.

JIM'S GLUTEN FREE BREAD


INGREDIENTS:
455 g gluten-free flour mix for bread (variation with Glutafin)

In a small bowl combine flour, sugar and salt.
Put the water in a large bowl, dissolved the yeast, then add the flour mix. 
Mix everything with a spatula, it has not to be perfectly smooth.
Cover and let rise.
Take the dough
the next day at 9.00 a.m.
Put a cotton cloth over a baking paper, dust with thin cornmeal, then put the dough overthe cloth.
Fold the dough: take one of the flaps and fold it in the middle of the dough, do the same thing with the other three edges. Then turn the loaf (very gently) so the folds are below.
Brush with oil, sprinkle with salt and cornmeal, then close it in the cloth.
Let rise for 2 hours. Half an hour before the end of the rising, turn on the oven (with a baking stone iside) to 250 ° C.
