I TORCETTI A MODO MIO

Dopo un mese riemergo dal mio silenzio... Un mese molto produttivo QUI e QUI, le due attività che riempiono le mie giornate. Inoltre è appena passato quello che potrei definire "l'evento dell'anno", che ha occupato davvero molto del mio tempo.

Oggi voglio postare una ricetta che è stata una scoperta! Dei dolcetti buoni buoni, soffici all'interno, ma con la crosticina zuccherosa e croccante all'esterno. Non so se sono come quelli "veri", ma la mia versione gluten free mi è proprio piaciuta!

TORCETTI MORBIDI



INGREDIENTI:
250 g farina senza glutine per pane (io ho usato Molino della Giovanna)
100 g burro
105 g acqua
3 g sale
1 cucchiaino di lievito di birra secco disidratato
1 cucchiaino di zucchero semolato (+ quello per decorare)


Far sciogliere il lievito con l'acqua tiepida zuccherata e lasciarlo agire per una decina di minuti fino a quando si crea una spuma in superficie.
Nella ciotola della planetaria impastare la farina, il sale e il lievito aggiungendo l'acqua, fino ad ottenere un impasto morbido, ma non troppo colloso. 
Coprire la ciotola con della pellicola per alimenti e lasciar lievitare per circa 1 ora e mezza.
Nel frattempo lasciar ammorbidire il burro fuori dal frigorifero. 
Non appena sarà trascorso il tempo di lievitazione unire il burro all'impasto, meglio se in due diversi tempi.
Infarinare leggermente il piano di lavoro, tagliate dei pezzi di impasto, all'incirca della stessa dimensione, e creare dei rotolini larghi 0,5 cm e lunghi 10-15 cm. 
Incrociare le estremità per dare la classica forma e premere leggermente per sigillarle. 
Passare i torcetti in una ciotola con zucchero semolato e adagiarli su teglia coperta con carta forno. 
Coprire con la pellicola trasparente e far lievitare 1 ora circa.
Far cuocere in forno ben caldo a 220°C per circa 10 minuti, fino a quando risulteranno di un bel colore nocciola dorato.

Si conservano in un barattolo a chiusura ermetica per un paio di giorni.
Se non si consumano subito, l'ideale sarebbe scaldarli poco poco in forno prima di mangiarli.

For today a good good pastry, soft inside, but with the sugary and crispy crust on the outside. I do not know if they are like the "real ones", but I really liked my gluten free version!

SOFT TORCETTI 


INGREDIENTS: 
250 g gluten free flour for bread (I used Molino dalla Giovanna) 
100 g butter 
105 g water 
3 g salt 
1 teaspoon active dry yeast dehydrated 
1 teaspoon sugar (+ some for garnish)


Dissolve the yeast in the sweetened  warm water and leave it for 10 minutes until it creates a foam on the surface. 
In the bowl of a planetary knead the flour, salt, baking powder and water until the dough is soft but not too sticky. 
Cover the bowl with plastic wrap and let rise for about 1 hour and a half. 
In the meantime, let it soften the butter out of the fridge. 
After the rising time add the butter to the mixture, preferably at two different times. 
Lightly flour the work surface, cut the pieces of dough, about the same size, and create large rolls of 0.5 cm and 10-15 cm long. 
Cross the ends to give the classic form and press lightly to seal. 
Put torcetti in a bowl with sugar and lay them on the baking sheet covered with parchment paper. 
Cover with plastic wrap and let rise about 1 hour. 
Bake in a hot oven at 220°C for about 10 minutes, until they are a nice golden brown color. 

Keep them in a airtight jar for a couple of days. 

If not eaten immediately, the ideal would be just a little warm them in the oven before eating.
