"CLAUSURA" FORZATA E CUPCAKE CONSOLATORI

2 uova
125 g yogurt bianco naturale
180 ml birra scura senza glutine
2 cucchiaini di estratto di vaniglia (certificato senza glutine o fatto in casa)
60 g cacao amaro (certificato senza glutine)
200 g zucchero
160 g mix per dolci senza glutine (io uso Mix Dolci Shar)
1 cucchiaino di bicarbonato
un pizzico di cannella
85 g burro fuso
For vanilla frosting
120 g formaggio cremoso tipo Philadelphia (certificato senza glutine)
30 g burro morbido
250 g zucchero a velo (certificato senza glutine)

A sudden urge to somethig sweet, a recipe that called me for a long time, a day without the possibility to move from home...

Last Saturday was a special day in my town... The Pope would have been to Monza Park for a special event with the faithful.
Everything ok... the problem is that I live in an area completely blocked to traffic on that day! Result: absolute prohibition to move with the car for all day.
What can we do? Let's console ourselves by cooking cupcakes!!!
I got the recipe from THIS BLOG and I adapted it to my gluten-free version.

DARK BEER CUPCAKES WITH VANILLA FROSTING

INGREDIENTS for 15 cupcakes:
For cupcakes
2 eggs

125 g plain yogurt

180 ml dark gluten free beer
2 teaspoons vanilla extract (certified gluten free or homemade)
60 g cocoa powder
 (certified gluten free)
200 g sugar
160 g gluten free cakes flour (I use Mix Dolci Shar)

1 teaspoon baking soda

a pinch of ground cinnamon
85 g butter, melted
For vanilla frosting
120 g cream cheese
 (certified gluten free)

30 g soft butter

250 g powdered sugar
 (certified gluten free)

1/2 teaspoon vanilla extract
(certified gluten free or homemade)
Seeds from 1/2 a vanilla bean

For cupcakes

Melt butter in microwave or on stovetop, then set aside.
In a large bowl whisk together eggs and yogurt.
Add beer and vanilla whisk until well combined.
Sift all the dry ingredients together (cocoa powder, sugar, flour, baking soda, and cinnamon) into a separate bowl.
Add about a third of the flour mixture into the wet ingredients and blend well.
Add the rest of the flour mixture, a third at a time, mixing well after each addition.
When all ingredients are blended, add the melted butter then continue mixing until very well combined.
Line a 15-cup cupcake pan with cupcake papers and pour batter into the cups, filling each only about 3/4 full.
Bake on center rack of the preheated 180°C  oven and for approximately 25 minutes.
When cupcakes are done (toothpick inserted in center of a cupcake will come out clean), remove the pan to a wire rack.
Let cool for ten minutes then remove cupcakes from pan and let them cool completely on wire rack.

For vanilla frosting

In a medium bowl, blend together cream cheese, butter, vanilla and vanilla bean seeds.
Gradually add powdered sugar, mixing well until it’s all incorporated.
Fill a sac-a-poche with a star nozzle and decorate each cupcake with the frosting.

RED VELVET CUPCAKES

INGREDIENTI per 15 cupcakes:
Per i cupcakes
160 g farina di riso sottilissima (certificata senza glutine)
60 g fecola di patate (certificata senza glutine)
30 g maizena (certificata senza glutine)
1/2 cucchiaino da tè di sale
8 g cacao amaro (certificata senza glutine)
110 g di burro morbido
300 g di zucchero
3 uova medie
1 cucchiaio di colorante rosso (certificata senza glutine)*
240 ml yogurt bianco naturale
1 cucchiaino da caffè di estratto di vaniglia
1 cucchiaio di aceto bianco
1 cucchiaino da tè di bicarbonato
Per il frosting
300 g di formaggio cremoso tipo Philadelphia
75 g di zucchero a velo (certificata senza glutine)
250 g di cioccolato bianco (certificato senza glutine)
zuccherini colorati (certificati senza glutine) -facoltativi-

*Io ho usato QUESTO...fantastico!!!!

ENGLISH VERSION:

It was a long time since I wanted to try a red velvet, but I always put off because I could not find the red color or the recipe that convince me fully.
Then I found both...and I had no more excuses! And since there is 10 days before Christmas I decided to "dress them for the occasion," with sugar and Christmas decorations.
I found the original recipe HERE.

L'INVASIONE DEI MINIONS

Bimbo ancora ammalato... "Mamma, facciamo un corso di cucina?"... "Certo tesoro!".

20 g cacao in polvere (certificato senza glutine)
140 g zucchero semolato
1 cucchiaino e ½ di lievito in polvere (certificato senza glutine)
un pizzico di sale
40 g burro a temperatura ambiente
120 ml latte intero
1 uovo
¼ cucchiaino di estratto di vaniglia

Per decorare:
10 g formaggio cremoso (tipo Philadelphia)*
1 cucchiaio di zucchero a velo (certificato senza glutine)*
pasta di zucchero senza glutine (comprata o fatto in casa come QUESTA)
coloranti alimentari (certificati senza glutine)

ENGLISH VERSION:

My child still sick ... "Mom, let's take a cooking class?" ... "Sure honey."

And notsomething simple and fast ... he wants cupcakes with sugar paste! But, as I mentioned a few posts ago, how do you say no to a sick child??
See the Minions invasion (from the movie "Despicable Me").
I took this cupcake recipe from the book "The Humming Bakey cookbook".

MINIONS CUPCAKES

INGREDIENTS for 10-12 cupcakes:
100 g gluten free cake flour
20 g cocoa powder
140 g caster sugar
1½ tsp baking powder
a pinch of salt
40 g butter, at room temperature
120 ml whole milk
1 egg
¼ tsp vanilla extract

To decorate:
10 g cream cheese*
1 tbs powdered sugar*
sugar paste (store bought or home made like THIS)
food colors

* With these two ingredients I prepared a "fake buttercream". You can prepare a real buttercream like THIS.

Preheat the oven to 170°C.
Put the flour, cocoa powder, sugar, baking powder, salt and butter in a freestanding electric mixer with a paddle attachment (or use a handheld electric whisk) and beat on slow speed until you get a sandy consistency and everything is combined.
Whisk the milk, egg and vanilla extract together in a jug, then slowly pour about half into the flour mixture, beat to combine and turn the mixer up to high speed to get rid of any lumps.
Turn the mixer down to a slower speed and slowly pour in the remaining milk mixture (scrape any unmixed ingredients from the side of the bowl with a rubber spatula).
Continue mixing for a couple more minutes until the mixture is smooth.
Do not overmix.
Spoon the mixture into the paper cases until two-thirds full and bake in the preheated oven for 20-25 minutes, or until the sponge bounces back when touched.
A skewer inserted in the centre should come out clean.
Leave the cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely. Prepare the "fake buttercream" mixing cream cheese and powdered sugar.
Cover each cupcake with the mixture.
Color che sugar paste and decorate as desired.
