PRONTI VIA, SI RIPARTE!

Eccomi! Dopo una luuuuunga vacanza (di cui vi parlerò il prima possibile), al mio rientro sono stata assalita da mille impegni legati a QUESTA e QUESTA attività, così il mio povero blogghino è rimasto lì in un angolo, ancora con quel piatto di pasta, buono sì, ma diciamo la verità...ci aveva un po' rotto! Urge pubblicare qualcosa di nuovo!!!
Oggi vi presento una ricetta supercolladata, preparata un milione di volte (anche nelle scorse vacanze): i pancakes ai mirtilli!!! Ideali per la colazione, cosparsi di sciroppo d'acero, ma perchè no, anche per una buona merenda, con frutta e gelato...in vacanza me li hanno serviti anche per pranzo, con fagioli e salsiccia (tutto rigorosamente gluten free)! Ma questa è un'altra storia...a breve i dettagli! ;-)
E allora a vanti con la ricetta, tratta dal libro "Buon appetito America!" di Laurel Evans.


BLUEBERRY PANCAKES


INGREDIENTI per 6 pancakes:
150 g farina senza glutine per dolci
10 g zucchero
un pizzico di sale
½ cucchiaino di lievito per dolci
¼ cucchiaino di bicarbonato di sodio
220 g latticello * 
1 uovo intero
40 g burro fuso
olio di semi
mirtilli
sciroppo d’acero, miele, burro, o quello che preferite per gustare al meglio i vostri pancakes

*Se in commercio non trovate il latticello potete prepararlo mescolando 250 g di yogurt magro con 250 g di latte scremato e qualche goccia di limone. Lasciate riposare a temperatura ambiente per circa 5-15 minuti prima dell'uso.



In una terrina setacciare insieme la farina, lo zucchero, la presa di sale, il lievito e il bicarbonato. 
Mettere da parte. 
In un’altra terrina sbattere il latticello, l’uovo e il burro fuso. 
Unire il tutto al composto con la farina e mescolate per amalgamare bene gli ingredienti. 
Ungere con poco olio una padella antiaderente e scaldate a fuoco medio. 
Quando la padella sarà ben calda versarvi un mestolo di pastella, creando una forma tonda.
Distribuire una manciata di mirtilli sulla pastella ancora morbida.
Girare il pancake appena si formeranno sulla superficie delle bollicine (ci vorranno circa 3 minuti).
Controllare che il fondo sia ben dorato. 
Ripetere l’operazione anche per l’altro lato. 
Servire i pancakes con sciroppo d’acero, miele, crema di nocciole, burro fuso e zucchero…quello che suggerisce la fantasia!

Here I am! After a long holiday (I will talk about it as soon as possible), on my return I started to be very busy, so my poor blog was abandoned...
Today I present a very good recipe, made a million times (even in the past few holidays): blueberry pancakes! Ideal for breakfast, sprinkled with maple syrup, but why not, even for a good snack with fruit and ice cream...
This recipe is from the book "Buon appetito America!" from Laurel Evans.


BLUEBERRY PANCAKES


INGREDIENTS for 6 pancakes:
150 g gluten free flour for cakes
10 g sugar
a pinch of salt
½ teaspoon of baking powder
¼ teaspoon of baking soda
220 g buttermilk *
1 whole egg
40 g butter, melted
seed oil
blueberries
maple syrup, honey, butter, or whatever you prefer to best enjoy your pancakes

* If you cann't find buttermilk, you can prepare it mixing 250 g of yogurt with 250 g of skim milk and a few drops of lemon. Let stand at room temperature for about 5-15 minutes before use.


In a bowl, sift together the flour, sugar, pinch of salt, baking powder and baking soda.
Set aside.
In another bowl, whisk the buttermilk, egg and melted butter.
Combine all the mixture with the flour and stir to mix the ingredients well.
Grease a frying pan with a little oil and put over medium heat.
When the pan is very hot pour a ladle of batter, creating a round shape.
Spread a handful of blueberries on the batter still soft.
Turn the pancakes when it will form bubbles  on the surface (it will take about 3 minutes).
Check that the bottom is golden brown.
Repeat for the other side.
Serve the pancakes with maple syrup, honey, hazelnut cream, melted butter and sugar...
