CHOCOLATE MERINGUE CAKE DI DONNA HAY (a modo mio...)

INGREDIENTI:
240 g cioccolato fondente tritato (certificato senza glutine)
180 g burro, a dadini
2 uova
4 uova extra, albumi e tuorli separati
90 g zucchero di canna
1 cucchiaino di estratto di vaniglia
50 g farina senza glutine per dolci (io ho usato Mix Dolci Shar), setacciata
½ cucchiaino di lievito in polvere, setacciato (certificato senza glutine)
40 g di farina di nocciole (certificata senza glutine)
220 g zucchero superfino
1 cucchiaino aceto bianco

ENGLISH VERSION:

As promised, I show you the cake for my "Hamburger Night," choose by my little boy. I was looking the latest issue of Donna Hay magazine, when he saw this cake and told me, "Mom, we must make this cake now!" ... I can't say no to a sick child!
I made a few small changes: first of all it has been transformed into gluten free, then instead of almonds, I put the hazelnuts.

DONNA HAY'S CHOCOLATE MERINGUE CAKE (my way...)

INGREDIENTS:
240g dark chocolate, chopped
(certified gluten-free)
180g unsalted butter, chopped
2 eggs
4 eggs, extra, separated
90g brown sugar
1 teaspoon vanilla extract
50g gluten free flour for cakes, sifted
½ teaspoon baking powder, sifted
(certified gluten-free)
40g hazelnut meal
(certified gluten-free)
220g caster (superfine) sugar
1 teaspoon white vinegar
3 teaspoons cornflour (cornstarch), sifted
(certified gluten-free)
25g cocoa, sifted, plus extra, for dusting
(certified gluten-free)

Preheat oven to 160ºC.
Lightly grease a 24cm-round springform cake tin, line the base with non-stick baking paper and set aside.
Place the chocolate and butter in a medium saucepan over low heat and stir occasionally until melted and smooth.
Allow to cool slightly.
Place the eggs, extra egg yolks, brown sugar and vanilla in the bowl of an electric mixer and whisk for 3–4 minutes or until pale and thick.
Add the chocolate mixture, flour, baking powder and hazelnut meal and fold gently to combine.
Pour the mixture into the prepared tin and bake for 35–40 minutes.
Remove from the oven and set aside.
Increase the oven temperature to 180°C.
Place the extra eggwhites in the clean bowl of an electric mixer and whisk on high speed until soft peaks form.
Gradually add the sugar, whisking until dissolved.
Add the vinegar and whisk for a further 2–3 minutes or until the meringue is thick and glossy.
Fold through the cornflour and cocoa and spoon the mixture onto the partially cooked cake.
Spread evenly and return the cake to the oven for 20–25 minutes or until the meringue is golden and crisp. Allow the cake to stand at room temperature for 15–20 minutes before gently running a small knife around the edge and removing the ring.
Allow the cake to cool at room temperature and refrigerate for 2 hours before serving.
Dust with the extra cocoa to serve. Serves 8–10.

* This cake is supposed to look rustic and uneven – don’t be alarmed if it cracks or collapses a little.

3 uova grandi, a temperatura ambiente
470 ml panna acida
Per il ripieno
50 g zucchero

versare l'impasto rimanente e livellare bene.

First of all, if you want to see some photos of my last Maldivian holiday, click HERE.

But let's change subject.
Some time ago I bought this book ... beautiful! I didn't know where to start... but a sweet immediately drew my attention: a soft cake with layers of delicious stuffing... time has passed, the peach's speriod was over, then was back, then finished again... then I read this post and I immediately come up with this recipe that I never dared to try, for lack of time, lack of desire or lack of confidence in the success... and here is a good time to try!
What about ... WONDERFUL! Super soft and fragrant!

So this recipe is part of the cupdz's challenge:

CAMPTON PLACE COFFEE CAKE

INGREDIENTS:
For the cake
3 cups gluten free flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces unsalted butter, softened
1 1/4 cups sugar
3 large eggs, at room temperature
2 cups sour cream
For the filling
1/4 cup sugar
1/4 cup packed light brown sugar
1 tablespoon ground cinnamon
1 tablespoon unsweetened cocoa powder
12 ounces peaches (4 small or 2 large), peeled, pitted, and cut into 1/2-inch pieces

Make the cake
Place a rack in the middle of the oven and preheat the oven to 175°C.
Grease a Bundt or kugelhopf pan with butter.
Sift together the flour, baking powder, baking soda, and salt three times and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, cream the butter and sugar together on medium speed for 5 minutes, or until light and fluffy.
Add the eggs one at a time.
Scrape down the bowl and paddle after each addition. In 3 additions of each, add the sour cream and the sifted dry ingredients, alternating the wet and dry ingredients, and beat on low speed until all of the ingredients are blended.
Make the filling
In a medium bowl, mix together the sugar, brown sugar, cinnamon, cocoa powder, and almonds (if using).
Scoop 1 1/2 cups of the cake batter into the prepared Bundt pan and, using a small metal spatula, spread it evenly to cover the bottom.
Sprinkle on 1/4 cup of the sugar mixture and dot with one- third of the peach chunks.
Scoop in 2 cups of the batter and spread evenly.
Sprinkle with the remaining sugar mixture and dot with the remaining peaches.
Spoon in any remaining batter and spread over the peaches.
Bake for 35 minutes.
Rotate the pan from front to back and bake for another 20 to 25 minutes, until a tester inserted into the center of the cake comes out clean.
Allow to cool in the pan on a rack for 30 minutes, then invert, remove the pan, and allow the cake to cool completely upside down on the rack.

CHOCOLATE BANANA BREAD

INGREDIENTI:

50 g di noci macadamia
250 g di farina senza glutine
30 g di cacao in polvere
200 g di zucchero
1 cucchiaino e 1/2 di lievito in polvere
1/4 di cucchiaino di sale
100 g di gocce di cioccolato bianco
2 uova grandi, leggermente sbattute
110 g di burro fuso e a temperatura ambiente
3 banane mature (circa 450 g) schiacciate

Lasciar raffreddare e poi tritarle grossolanamente.
Servite caldo o a temperatura ambiente.

The rules are simple: you choose a recipe from another blog, you try it, you create a post on your blog and report the "theft" to blog friend and, of course, the Trattoria, specifically in this post.
The more plagiarized blog will win a nice gift.

And here's my "plagiarism".
Muffins...my passion! The choice of this recipe comes from the fact that in my fridge there was a beautiful mango (received as gifts from friends in a beautiful basket of fruit) that I wanted to use in a sweet preparation...
In the blog Dolci Profumi I found this recipe and I immediately decided it was the perfect one.
The result: special and fragrant muffins!

MANGO AND CARDAMOM MUFFINS

N.B. Used as the unit of measure the empty jar of yogurt.

INGREDIENTS for 16 muffins:
2 jars of white yogurt
1 jar sugar
2 tablespoons honey
2 jars of gluten free flour
2 jars of minced almonds
½ packet of baking powder
1 egg
3-4 tablespoons extravirgin olive oil
1 ripe mango
a pinch of cardamom powder
a pinch of salt

Preheat the oven to 180°C.
Mix the yogurt with the sugar and honey, add the almonds and cardamom.
Still stirring, pour in the oil and a pinch of salt, then combine the flour with the yeast.
Cut the mango into cubes and add it to the preparation.
Fill the muffin molds and bake for 20-25 minutes.

INGREDIENTI:
1 panetto di pasta sfoglia senza glutine
100 g prosciutto cotto a fette
1 uovo + 1 tuorlo
80 g formaggio caprino
3-4 cucchiai di grana padano grattugiato
300 g asparagi
1 cipolla rossa
125 g mozzarella
latte
olio extravergine d'oliva
sesamo
sale
pepe

Aggiungere sale e pepe e lasciar intiepidire.

After seeing this Sandra's delicacy, I wanted to prepare something similar.
A look in the fridge and I created this recipe.
The gluten free puff pastry has some limitations (it doesn't becomes pretty crumbly and crunchy like the normal one), but the result pleasantly surprised me.
With this recipe I participate to Pippi's blog event, "Strudel...amore mio!".

SAVOURY STRUDEL WITH HAM, ASPARAGUS AND MOZZARELLA CHEESE

INGREDIENTS:
1 stick of gluten free puff pastry

100 g sliced ham
1 egg + 1 egg yolk
80 g goat cheese

3-4 tablespoons of grated Grana Padano

300 g asparagus

1 red onion

125 g mozzarella

milk

extra virgin olive oil

sesame
seeds
salt

pepper

Wash the asparagus, remove the harder final part and boil them in salted water.
Thinly slice the onion and cook it with a little oil, then add the asparagus, cut into pieces and cook together for a few minutes.
Add salt and pepper and let it cool.
With a rolling pin spread the puff pastry until it forms a thin rectangle.
Put the slices of ham on the puff pastry.
In a bowl mix the egg with goat cheese, Grana Padano, salt and pepper.
Spread the mixture on the ham, cover with the cooked vegetables and then with mozzarella cut into cubes.
Gently roll the pastry, giving the form of a strudel, and with a knive create some engravings on the surface.
Beat the remaining egg yolk with a little milk, then brush the surface of the strudel with the compound.
Finally, sprinkle with sesame seeds.
Bake at 180°C for 45 minutes.
