COOKIES E INGREDIENTI "CONTROVERSI"

L'argomento "AVENA" per i celiaci è un po' controverso.
In passato, infatti, veniva esclusa a priori dalla dieta del celiaco, mentre diversi studi la dipingono come relativamente sicura. In particolare, se introdotta pura, ossia non contaminata da proteine del grano, dell'orzo o della segale durante la lavorazione, l'avena non sarebbe lesiva.
In alcuni paesi stranieri, come USA e Canada, si trova tranquillamente in commercio l'avena gluten free (quindi zero contaminazioni), disponibile in diversi formati (fiocchi, farina...).
Io, nella mia vita precedente "con glutine", ho sempre adorato i dolci all'avena e, quando nel mio ultimo viaggio in Canada ho trovato al supermercato un intero scaffale dedicato all'avena gluten free non ho resistito e ho fatto scorta...
L'ho provata in diversi modi, usandola per diversi dolci. Questo è il primo. Partiamo da un classico, i cookies al cioccolato, con questa strepitosa ricetta tratta dal libro "California Bakery".

CHOCOLATE CHIPS COOKIES



INGREDIENTI 10 cookies grandi (o, come ho fatto io, 18 cookies più piccoli):
280 g zucchero
230 g burro a temperatura ambiente
5 g melassa
2 uova
1 pizzico di vaniglia
Ingredienti secchi
400 g farina senza glutine per dolci (io uso Mix dolci Shar)
80 g fiocchi d'avena senza glutine (io ho usato Gluten Free Rolled Oats di Bob's Red Mill)
2-3 g bicarbonato di sodio
2 g sale fino
150 g cioccolato fondente a pezzetti


Lavora con un cucchiaio il burro con lo zucchero fino ad ottenere un composto liscio e omogeneo, poi incorpora la melassa,un uovo alla volta e infine la vaniglia.
In una seconda ciotola unisci tutti gli ingredienti secchie, in ultimo, il cioccolato.
Amalgama i due composti con un cucchiaio, forma una palla e lascia riposare in frigorifero per almeno 30 minuti.
Nel frattempo rivesti una teglia di carta forno.
Togli l'impasto dal frigo e con le mani, velocemente, forma delle palline leggermente schiacciate e posizionale sula teglia, distanziate bene le une dalle altre. 
Cuoci per circa 20 minuti in forno preriscaldato a 170°C.
Controlla la cottura: i cookies dovranno risultare morbidi al tatto.
Sforna e fai raffreddare su una gratella.

The topic "OAT" for celiac people is a bit 'controversial. 
In the past, it was  excluded from the diet of celiac people, while now several studies say it as relatively safe. In particular, if introduced pure, not contaminated with proteins of wheat, barley or rye during processing, the oats would not be dangerous. 
In some foreign countries, such as USA and Canada, you can find gluten free oats (so no contamination), available in different formats (flakes, flour ...). 
Before discovering I'm celiac, I loved treats with oat. In my last trip to Canada I found at the supermarket a whole shelf dedicated gluten free oats... I could not resist and I bought it
I tried it in different ways, using it for various treats. This is the first. Let's start with a classic, chocolate cookies, with this great recipe from the book "California Bakery."


CHOCOLATE CHIPS COOKIES


INGREDIENTS 10 large cookies (or, as I did, 18 smaller cookies): 
280 g sugar 
230 g butter at room temperature 
5 g molasses 
2 eggs 
1 pinch of vanilla 
Dry ingredients 
400g gluten free flour for cakes (I use Cake Mix Shar) 
80 g gluten-free rolled oatmeal (I used Gluten Free Rolled Oats di Bob's Red Mill
2-3 g baking soda 
2 g salt 
150 g dark chocolate, cut into small pieces


With a tablespoon mix butter with the sugar until the mixture is smooth and homogeneous, then add molasses, one egg at a time and then vanilla. 
In a second bowl combine all dry ingredients and finally the chocolate. 
Mix the two compounds with a spoon, shape into a ball and let rest in the fridge for at least 30 minutes. 
Meanwhile cover a baking sheet with parchment paper. 
Remove the dough from the fridge and with your hands, shape quickly into balls, crush them slightly and place them on the baking sheet, well spaced from each other. 
Cook for about 20 minutes in a preheated oven at 170°C. 
The cookies will be soft to the touch. 
Let it cool on a wire rack.

Davvero deliziosi questi cookies..non sapevo di queste controversie sull'avena..se ne scopre una ogni giorno @.@
