RED VELVET CUPCAKES CON IL VESTITINO NATALIZIO

Era da tanto tempo che volevo cimentarmi nella preparazione di una red velvet, ma ho sempre rimandato perché non trovavo il colorante rosso giusto o la ricetta che mi convinceva pienamente.
Poi ho trovato entrambi...e non ho avuto più scuse! E visto che mancano 10 giorni a Natale ho pensato di "vestirli per l'occasione", con zuccherini e decori natalizi.

RED VELVET CUPCAKES


INGREDIENTI per 15 cupcakes:
Per i cupcakes
160 g farina di riso sottilissima (certificata senza glutine)
60 g fecola di patate (certificata senza glutine)
30 g maizena (certificata senza glutine)
1/2 cucchiaino da tè di sale
8 g cacao amaro (certificata senza glutine)
110 g di burro morbido
300 g di zucchero
3 uova medie
1 cucchiaio di colorante rosso (certificata senza glutine)*
240 ml yogurt bianco naturale
1 cucchiaino da caffè di estratto di vaniglia
1 cucchiaio di aceto bianco
1 cucchiaino da tè di bicarbonato
Per il frosting
300 g di formaggio cremoso tipo Philadelphia
75 g di zucchero a velo (certificata senza glutine)
250 g di cioccolato bianco (certificato senza glutine)
zuccherini colorati (certificati senza glutine) -facoltativi-

*Io ho usato QUESTO...fantastico!!!! Dona un bellissimo colore rosso che non si perde in cottura!



Per i cupcakes
In un recipiente mescolare le farine, il sale e il cacao.
In un'altra ciotola capiente montare per 2-3 minuti il burro, quindi aggiungere lo zucchero e montare per altri 3 minuti. 
Aggiungere una alla volta le uova medie e montare per 30 secondi dopo ogni aggiunta.
A parte mescolare il colorante rosso con  lo yogurt e aggiungerlo gradualmente al composto di burro e uova alternandolo con le farine. 
Procedere poco per volta continuando a montare e alla fine aggiungere l'estratto di vaniglia e amalgamare.
Versare in una tazzina l'aceto e il bicarbonato, mescolare brevemente e versare il tutto nell'impasto, amalgamando bene con una spatola.
Versare l'impasto nei pirottini da cupcake e cuocere a 175° per 20-25 minuti.
Far raffreddare bene prima di decorare.




Per il frosting

In una ciotola lavorare per 2 minuti con le fruste elettriche il formaggio cremoso e lo zucchero a velo.
Far fondere al microonde il cioccolato bianco.
Quando sarà morbido, mescolare brevemente con un cucchiaio per eliminare eventuali grumi, quindi versare nel composto di formaggio e amalgamare bene.
Mettere il frosting in una sac-a-poche e decorare la superficie dei cupcakes, poi cospargere di zuccherini colorati.

It was a long time since I wanted to try a red velvet, but I always put off because I could not find the red color or the recipe that convince me fully.
Then I found both...and I had no more excuses! And since there is 10 days before Christmas I decided to "dress them for the occasion," with sugar and Christmas decorations.

RED VELVET CUPCAKES


INGREDIENTS for 15 cupcakes:
For the cupcakes
160 g thin rice flour (certified gluten-free)
60 g potato flour (certified gluten-free)
30 g cornstarch (certified gluten-free)
1/2 teaspoon salt
8 g cocoa powder (certified gluten-free)
110 g soft butter
300 g of sugar
3 medium eggs
1 tablespoon of red color (certified gluten-free) *
240 ml natural yoghurt
1 teaspoon vanilla extract
1 tablespoon white vinegar
1 teaspoon baking soda
For the frosting
300 g of cream cheese like Philadelphia
75 g of powdered sugar (certified gluten-free)
250 g white chocolate (certified gluten-free)
colored sugar (certified gluten) -optional-

* I used THIS ... fantastic !!!! Gives a beautiful red color that is not lost in cooking!


For the cupcakes
Mix the flour, salt and cocoa in a bowl.
In another large bowl mount the butter for 2-3 minutes, then add the sugar and beat for another 3 minutes.
Add the eggs, one at a time, and mix for 30 seconds after each addition.
Mix the red color with yogurt and add gradually to the butter mixture alternately with flour and eggs.
Proceed gradually continuing to mount and then add the vanilla extract and mix.
Pour vinegar and baking soda  into a small cup, stir briefly and pour in the mixture, mixing with a spatula.
Pour the batter into a cupcake mold and bake at 175°C for 20-25 minutes.
Let it cool thoroughly before decorating.

For the frosting
Whisk the cream cheese and powdered sugar in a bowl for 2 minutes with electric mixer.
Melt white chocolate in the microwave.
When it is soft, stir briefly with a spoon to remove any lumps, then pour into the cheese mixture and mix.
Put the frosting in a sac-a-few and decorate the cupcakes, then sprinkle with colored sugar.
