ANCHE QUEST'ANNO...I DOLCI DELLA VIGILIA

Anche quest'anno, come l'anno scorso, continua la tradizione della sera della vigilia: niente cenone, ma un bel vin brulè accompagnato da dolcetti vari.
Ecco cosa ho scelto per quest'anno:


GINGERBREAD


Ingredienti per circa 50 biscotti:
250 g farina senza glutine
50 g zucchero
60 g burro
80 ml melassa (o miele)
1 uovo
1 punta di bicarbonato
2 cucchiaini di spezie miste in polvere*
1 cucchiaino di buccia di arancia grattugiata
1 pizzico di sale
Per la glassa
200 g di zucchero a velo
acqua
coloranti alimentari (rosso, verde)


* Si possono mettere le spezie che si preferiscono. Io ho usato un mix già pronto, con cannella, noce moscata, coriandolo, semi di finocchio, zenzero, chiodi di garofano, pimento, anice, anice stellata, pepe, cardamomo.


Montare il burro con lo zucchero.
Aggiungere le uova, il miele, la scorza di arancia.
Piano piano unire la farina mescolata al bicarbonato, alle spezie e a un pizzico di sale.
Far riposare in frigorifero un paio d'ore.
Con un mattarello stendere la pasta ad uno spessore di pochi millimetri, ricavarne dei biscotti e cuocerli a 180° per circa 10-12 minuti.


Suddividere lo zucchero in tre ciotoline.
Nella prima ciotolina aggiungere poche gocce di colorante rosso, nella seconda di colorante verde e nella terza non aggiungere coloranti.
Unire poco alla volta alcune gocce d'acqua e mescolare fino ad ottenere una bella glassa densa.
Decorare i biscotti.

N.B. Io, grazie ad un suggerimento di Cristiana, per decorare i biscotti ho usato delle siringhe. Sì, proprio siringhe da iniezioni! Sono sterili, quindi adatte anche per questo uso insolito. Mah, che ci volete fare, sarà una deformazione professionale!


CHICCHI DI CAFFÈ GIGANTI


Questi biscotti li avevo preparati già tempo fa. QUI trovate la ricetta.
Questa volta ho solo aggiunto un po' di cioccolato fuso come decorazione.


FRANGIPANE MINCE PIES


INGREDIENTI per circa 24 pezzi:
Per la pasta
175 g farina senza glutine
30 g mandorle macinate
65 g zucchero a velo
un pizzico di sale
125 g burro freddo a dadini
2 grandi tuorli d'uovo, sbattuti con un cucchiaio di acqua ghiacciata
Per il ripieno
circa 400 g micemeat
2 uova grandi
90 g zucchero
90 g burro fuso
90 g mandorle macinate
4 cucchiai di mandorle in scaglie
Per il micemeat
125 g zucchero scuro
125 ml succo di mela
500 g mele, pelate e tagliate in quarti
1/4 cucchiaino di spezie miste
1/4 cucchiaino di cannella in polvere
125 g mirtilli rossi secchi
125 g uvetta
70 g ciliegine candite tritate
la scorza e il succo di 1/2 limone
45 ml rum


Preparare il mincemeat.
In una grande casseruola, sciogliere a fiamma dolce lo zucchero nel succo di mela.
Tritare le mele e aggiungerle nella pentola.
Poi aggiungere gli altri ingredienti, tranne il rum, e far sobbollire per 30 minuti o fino a quando il tutto avrà raggiunto una consistenza polposa.
Lasciar raffreddato un po', poi aggiungere il rum.

Preparare la pasta.
Mettere farina, mandorle macinate, zucchero e sale nella ciotola del food processor e azionare.
Aggiungere il burro a dadini e mescolare fino ad ottenere un impasto friabile.
Ora iniziare ad aggiungere un cucchiaio alla volta la miscela di uova e acqua fino a quando la pasta formerà una palla.
Trasferire l'impasto su una superficie, coprire con pellicola trasparente e mettere in frigo a riposo per 30 minuti.
Stendere l'impasto con il mattarello e tagliare 24 cerchi di 8 cm di diametro.
Imburrare e infarinare 24 stampi da cupcake, foderarli con i cerchi di pasta, premere delicatamente e rimettere in frigorifero per 15 minuti.
Preriscaldate il forno a 200°C.

Preparare il ripieno.
In una ciotola, sbattere insieme uova e zucchero, quindi versare, continuando a sbattere, il burro fuso.
Aggiungere le mandorle macinate, ottenendo così il "frangipane".

Mettere un cucchiaino scarso di mincemeat in ciascuno stampo foderato con un disco di pasta.
Aggiungere sopra un cucchiaio di frangipane.
Cospargere con scaglie di mandorle e quindi mettere in forno a cuocere per 15 minuti, o finché la pasta sarà cotta e il frangipane avrà assunto un colore dorato.
Togliere dal forno e lasciare raffreddare negli stampi per 5 minuti prima trasferire su una gratella a raffreddare.


CHRISTMAS-MORNING MUFFINS



INGREDIENTI per circa 30 pezzi:
Per i muffins
200 g di farina senza glutine
1 bustina di lievito per torte
75 g di zucchero di canna
un pizzico di noce moscata
1 piccola arancia
circa 50 ml latte
60 g burro fuso
1 uovo
100 g di mirtilli rossi secchi
Per completare
2 cucchiaini di zucchero di canna
1/2 cucchiaino di cannella


Preriscaldate il forno a 200°C.
In una grande ciotola unire farina, lievito, zucchero e noce moscata.
Spremere il succo d'arancia, poi aggiungere il latte sufficiente ad ottenere 150 ml di liquido.
Aggiungere il burro fuso e l'uovo, poi sbattere bene il tutto.
Versare il liquido nella ciotola degli ingredienti secchi e mescolate fino a che non saranno ben amalgamati.
Per ultimo unire i mirtilli rossi e riempire gli stampini per mini muffins.
Mescolare lo zucchero di canna con cannella e cospargere la superficie dei muffins.
Mettere gli stampini in forno e cuocere per 15 minuti.


ENGLISH VERSION:

This year, like last year, continues the tradition of the Christmas Eve: mulled wine with cookies and pastry.
Here's what I chose for this year:



GINGERBREAD


Ingredients for about 50 cookies:
250 g gluten free flour
50 g sugar
60 g butter
80 ml molasses (or honey)

1 egg
1 tip bicarbonate
2 teaspoons spice mixture powder*
1 teaspoon grated orange peel
1 pinch of salt

For the frosting

200 g icing sugar

water

food colors (red, green)



* You can use your favourite spices. I used a mix of cinnamon, nutmeg, coriander, fennel seeds, ginger, cloves, allspice
, anise, star anise, pepper, cardamom.


Mount the butter with sugar.
Add the eggs, honey, orange peel.
Add flour mixed with baking soda, spices and a pinch of salt.
Allow to stand in the refrigerator for a couple of hours.
Roll the dough to a thickness of a few millimeters, obtain cookies and cook at 180°C for about 10-12 minutes.

Divide sugar into three bowls.

In the first bowl add a few drops of red food colour, in the second green food colour and in the third don't add colours.
Add a few drops of water and stir until obtaining a thick glaze.
Decorate cookies.

N.B. I, thanks to a suggestion by Cristiana, to decorate the cookies I used syringes. Yes, syringes for injections! They are sterile, and also suitable for this unusual use.


GIANT COFFEE BEANS


I had already prepared these cookies. HERE is the recipe.
This time I added some melted chocolate as decoration.



FRANGIPANE MINCE PIES


INGREDIENTS for about 24 pieces:
For the pastry
175 g gluten free flour
30 g ground almonds

65 g icing sugar

a pinch of salt

125 g cold butter, diced

2 large egg yolks, beaten with a tablespoon of iced water

For the topping

approximately 400 g mincemeat
2 large eggs
90 g sugar
90 g butter, melted
90 g ground almonds
4 tablespoons flaked almonds
For the mincemeat
125 g dark sugar
125 ml apple juice
500 g apples, peeled. halved and quartered
1/4 teaspoon mixed spice
1/4 teaspoon ground cinnamon
125 g dried cranberries
125 g raisins
70 g glacé cherries, roughly chopped
rind and juice of 1/2 lemon
45 ml rum



Prepare the mincemeat.
In a large saucepan, dissolve the sugar in the apple juice over a gentle heat.

Roughly chop the apples and add them to the saucepan.
Then add all the other ingredients except the rum, and simmer for 30 minutes or until everything looks pulpy.
Take off the heat and when it has cooled a little, stir in the rum.

Prepare the pastry.
Put the flour,
ground almonds, sugar and salt into the bowl of the food processor and pulse to combine.
Add the
diced butter ad process till you've got a flaky, crumbly mix.
Now start addind, tablespoon by tablespoon,
the egg and water mix, pulsing as you do so, until the pastry looks like it's about to forma a ball around the blade.
Turn it out onto a surface, cover with clingfim and put into the fridge to rest for 30 minutes.
Roll the dough and cut 24 circle of 8 cm in diameter.
Grease 24 cupcake molds.
Line the prepared molds with the circles, press these in gently, patting base and sides and put back in the fridge for 15 minutes.
Preheat the oven to 200°C.

Prepare the topping.
In a bowl, beat together the eggs and sugar, then pour in, still beating, the melted butter.
Stir in the ground almonds, obtaining in ths way the "frangipane".

Put a scant teaspoon of mincemeat into each pastry-lined cavity.
Dullop a tablespoon of the topping mixture on the top.
Sprikle with flaked almonds and then put in the oven to cook for 15 minutes, or until the pastry is cooked through and the frangipane gold and brown-flecked.
Take out of the oven and leave to cool in the tins for 5 minutes before tranferring to a wire rack to cool.


CHRISTMAS-MORNING MUFFINS


INGREDIENTS for about 30 pieces:
For the muffins
200 g gluten free flour
1 sacket of cake yeast

75 g demerara sugar

good grating fresh nutmeg
1 small orange

approximately 50 ml milk

60 g butter, melted

1 egg

100 g dried cranberries

For the topping
2 teaspoons demerara sugar
1/2
teaspoon ground cinnamon


Preheat the oven to 200°C.
In a large bowl combine the flour, yeast and sugar, and grate over a generous amount of fresh nutmeg.
Squeeze the orange juice into a measuring jug, then pour in milk on top till it comes up to the 150 ml mark.
Add the melted butter and the egg, and beat to combine.
Pour the jug of liquid ingredients into the bowl of dry ingredients and stir till the ingredients are more or less combined.
Last of all, lightly fold in the cranberries and fill the mini muffin cases of cups.
Mix together the demerara sugar and ground
cinnamon and sprinkle over the top of the muffins.
Stick them in the oven and bake for 15 minutes.
