PANT PANT...

Sempre di fretta...però non la domenica mattina presto: che bel momento! Marito e piccolo dormono (incrociamo le dita!!!) e io posso dedicarmi a ciò che voglio: la cucina (la torta è già in forno...), il blog, i miei hobbies creativi...
Oggi, dopo alcuni giorni di assenza, torno con una ricetta facile facile...ma buona buona!


SPAGHETTI ALL'AMATRICIANA CON LE COZZE


INGREDIENTI per 2 persone:
160 g spaghetti senza glutine
500 g cozze pulite e spurgate
200 g passata di pomodoro
uno spicchio d'aglio
50 g guanciale a dadini
1/2 bicchiere di vino bianco secco
2 cucchiai di pecorino romano grattugiato
peperoncino in povere
olio extravergine d'oliva
sale


Sbucciare l'aglio e soffriggerlo in una padella con 2 cucchiai d'olio e un pizzico di peperoncino; unire la passata di pomodoro e cuocere a fiamma bassa per 30 minuti.
Sciacquare le cozze e riunirle in un'altra padella con il vino e farle aprire a fiamma alta; scolarle dal fondo di cottura e filtrare quest'ultimo, versandolo in una pentola.
Aggiungere abbondante acqua, quanto basta per cuocere la pasta, portare a ebollizione, regolare di sale, tuffarvi gli spaghetti e cuocerli al dente.
Quasi a termine della cottura, aggiungere al sugo le cozze.
Soffriggere il guanciale in una padella antiaderente finché risulterà dorato e croccante.
Scolare la pasta, versarla nella padella con il sugo, farla insaporire per un minuto, cospargerla con il guanciale e servirla con il pecorino grattugiato.

Today, after several days' absence, I return with an easy recipe...but very very good!


SPAGHETTI ALL'AMATRICIANA WITH MUSSELS


INGREDIENTS for 2 people:
160 g gluten-free spaghetti
500 g mussels, clean and purge
200 g tomato sauce
a clove of garlic
50 g bacon, diced
1/2 cup dry white wine
2 tablespoons grated Pecorino Romano
ground chili
extra virgin olive oil
salt


Peel the garlic and fry in a pan with 2 tablespoons of oil and a pinch ground chili, add the tomato sauce and cook over low heat for 30 minutes.
Rinse the mussels and put them in another pan with the wine and make them open to high heat, drain from the cooking liquid and filter it, pouring it into a pot.
Add plenty of water, enough to cook pasta, bring to a boil, adjust salt, dip the spaghetti and cook al dente.
Almost to the end of cooking, add the mussels to the sauce.
Fry the bacon in a nonstick skillet until golden and crisp.
Drain the pasta, pour into the pan with the sauce, seasoning it for a minute, sprinkle with the bacon and serve with grated Pecorino Romano.

vedo che anche di fretta sei sempre bravissima!

Anche se odio cucinare di fretta, negli ultimi tempi spesso non posso fare altrimenti...quindi mi ingegno!!! :-)))
