UN ABBINAMENTO PERFETTO

Questa torta mi è proprio piaciuta.
Sarà perché è "cioccolatosa" al punto giusto...sarà per il sapore particolare delle pere cotte nello spumante...sarà perché finalmente ho trovato la ricetta di una pasta frolla che non si sbriciola solo a guardarla, ma rimane compatta e fragrante al punto giusto!!!


CROSTATA DI PERE UBRIACHE E CIOCCOLATO


INGREDIENTI
Per la pasta frolla
200 g farina senza glutine per dolci (io ho usato il "Mix per crostate"*)
1/2 bicchiere di zucchero
un pizzico di vaniglia in polvere
1 cucchiaino di lievito per dolci
1 uovo
55 g burro
Per la farcitura
100 g burro
120 g zucchero
2 uova
1 tuorlo
1 limone
250 g cioccolato fondente
500 ml spumante brut
1 baccello di vaniglia
3 pere


* Su CIS ho trovato questo "Mix per crostate e torte salate"...che poi è stato preso da QUI...che poi non è altro che uno dei famosi mix di farine di Bette Hagman.

120 g farina di tapioca
110 g amido di mais
65 g fecola di patate
220 g farina di riso glutinoso
7 g xantano
1 cucchiaino di sale
1 cucchiaino di zucchero

Preparare il mix e prelevare il quantitativo che serve per la realizzazione della ricetta.



Preparare la pasta frolla.
Lavorare burro, zucchero e vaniglia in polvere fino ad ottenere un composto morbido, poi aggiungere l'uovo e piano piano metà della farina.
Unire l'altra metà della farina e il lievito.
Formate il panetto e stenderlo con il mattarello su un foglio di carta forno e ricavare un cerchio di 24 cm di diametro, eliminando eventuali eccedenze di pasta.
Adagiare il cerchio così ottenuto in una teglia, poi formare dei cordoni con la pasta rimanente e creare il bordo, pigiando leggermente lungo i bordi della tortiera.
Far riposare in frigo per mezz'ora.

Preparare la farcitura.
Sbucciare le pere, tagliarle in 8 spicchi ed eliminare il torsolo.
Scaldare lo spumante con la vaniglia e 40 g di zucchero; unire le pere bagnate con il succo del limone e cuocere per 15 minuti.
Sciogliere a bagnomaria il cioccolato con il burro.
Montare a bagnomaria le uova e il tuorlo con 80 g di zucchero e versarvi a filo il cioccolato fuso.
Sgocciolare le pere.

Togliere dal frigo la pasta frolla già stesa nella teglia, bucherellare il fondo con una forchetta, coprirlo con un foglio di carta forno e riempire di legumi secchi.
Cuocere in forno caldo a 180°C per 20 minuti.
Eliminare carta e legumi.
Versare la crema al cioccolato nella base di pasta, disporvi le fette di pera a raggiera, facendole affondare nella crema, quindi cuocere la torta per altri 20 minuti.

This cake is very good, because it has a lot of chocolate...because of the particular flavor of pears cooked in wine...because I finally found a recipe for a short pastry that doesn't break just looking at it, but it remains compact and fragrant in the right way!


DRUNK PEARS AND CHOCOLATE TART


INGREDIENTS:
For the short pastry
200 g gluten free flour for cakes (I used the "Mix for tarts"*)
1/2 cup sugar
a pinch of vanilla powder
1 teaspoon of baking powder

1 egg

55 g butter

For the stuffing
100 g butter
120 g sugar
2 eggs
1 egg yolk
1 lemon
250 g dark chocolate
500 ml sparkling brut wine
1 vanilla pod

CIS, I found this "Mix for tarts and quiches"...it was taken from HERE...and it's one of Bette Hagman's mixes.

120 g tapioca flour
110 g of corn starch
65 g potato starch
220 g glutinous rice flour
7 g xantan gum
1 teaspoon salt
1 teaspoon sugar


Prepare the mix and take the right quantity for the realization of the recipe.


Prepare the short pastry.
Work butter, sugar and vanilla powder until you have a soft compound, then add the egg and half of the flour mix.
Combine the other half of the flour and the baking powder.
Spread the batter with a rolling pin on a sheet of paper for oven and create a circle of 24 cm in diameter, discarding any excess dough.
Put the circle in a pan, then form a cord with the remaining dough and create the board, lightly pressing along the edges of the cake.
Let it rest in the fridge for half an hour.

Prepare the stuffing.
Peel the pears, cut into 8 wedges and remove core.
Heat the wine with vanilla and 40 g of sugar, combine pears bathed with the juice of the lemon and cook for 15 minutes.

Dissolve in water bath the chocolate with the butter.
In water bath mount the eggs and the yolk with 80 g of sugar and add in the melted chocolate.
Drain pears.

Remove the short pastry from the refrigerator, puncture the bottom with a fork, cover with a sheet of paper for oven and fill with pulses.
Bake in oven at 180°C for 20 minutes.
Remove paper and pulses.
Cover the short pastry with the chocolate cream, put the slices of pear radially, pressing them into the cream, then bake for another 20 minutes.

Favolosa, conosco la classica crostata con cioccolato e pere, ma questa con lo spumante è davvero tutta da provare ;)
