UN COMPLEANNO DA NABABBI - parte prima

Oggi è il compleanno del mio maritino! Alessio compie 31 anni!




E siccome il compleanno del "signorino" cade nel weekend, si becca ben tre giorni di festeggiamenti:

1. VENERDÌ 14 - Cenetta "privata"
2. SABATO 15 - Pranzo dai suoceri

3. DOMENICA 16 - Torta tutti insieme


Non male, eh??? Neanche fosse il Sultano del Brunei...

Ma andiamo con ordine...

1. Venerdì 14 - CENETTA "PRIVATA"

Come tutti gli anni da quando siamo sposati, per il compleanno del maritino organizzo, oltre ai festeggiamenti con parenti e amici, una bella cenetta solo per noi.
Quest'anno, vista la lunghezza dei festeggiamenti, ho pensato di creare un menù non troppo imponente, ma che fosse anche sfizioso...ne è nata una sorta di happyhour casereccio.

APERITIVO
Tintoretto

STUZZICHERIE
Blinis con salmone affumicato
Tartare di branzino in coni di sesamo e papavero
Cozze gratinate


DOLCE
Budino all'arancia con salsa al cioccolato


N.B. Tutte le ricette sono per 4 persone...noi eravamo in due, ma ho pensato "E se il maritino torna dal lavoro affamato???!!!"


TINTORETTO


INGREDIENTI:
250 ml succo di melograno (3/10)
550 ml spumante brut (7/10)


Tagliare il melograno a metà come una arancia e schiacciarlo in uno spremiagrumi.
Lasciare riposare il succo per 10/15 minuti.
Unire il succo di melograno allo spumante brut ben fresco e servire in flùte.


BLINIS CON SALMONE AFFUMICATO


INGREDIENTI:
300 g salmone affumicato a fettine sottili
1 cucchiaio di miele di sapore delicato
succo di mezzo limone
10 g lievito di birra
80 ml latte
60 g farina senza glutine
1 cucchiaio di zucchero
1 tuorlo
1 albume
30 g burro
sale
aneto per decorare



Metter le fettine di salmone affumicato in una ciotola e condirle con il miele e il succo di limone.
Lasciare riposare in frigorifero mentre si procede con la preparazione dei blinis.
Far sciogliere il lievito nel latte tiepido, unire la farina, lo zucchero, il tuorlo, una presa di sale; mescolare bene e lasciar riposare per 30 minuti in luogo tiepido l'impasto, che dovrò risultare denso e schiumoso.
Passato il tempo di lievitazione, incorporare al composto 20 g di burro fuso e freddo e l'albume montato a neve ben ferma.
In una piccola padella antiaderente far fondere una noce di burro e versare a cucchiaiate piccole quantità di impasto, formando dei dischetti di circa 8 cm di diametro.
Non cuocerne troppi per volta.
Quando l'impasto risulterà leggermente addensato ai bordi e formerà piccole bolle sulla superficie, rigirare i blinis e cuocerli dall'altro lato.
Farli quindi raffreddare su una gratella.
Disporre i blinis su un piatto di portata, guarnire ognuno con una fetta di salmone marinato al miele e decorare con un ciuffetto di aneto.


TARTARE DI BRANZINO IN CONI DI SESAMO E PAPAVERO


INGREDIENTI:
200 g branzino fresco tagliato a fettine sottili
2 cucchiai di uova di salmone
1 cipollotto
succo di mezza arancia
1 cucchiaino di olio extravergine d'oliva
6 cucchiai di farina
senza glutine
1 cucchiai e 1/2 di zucchero
2 albumi freddi
80 g burro a temperatura ambiente
2 cucchiai di semi di sesamo
2 cucchiai di semi di papavero
sale
pepe in grani


Mettere le fettine di branzino in una ciotola, unire il cipollotto mondato, lavato e tritato, il succo d'arancia, l'olio, sale e pepe macinato al momento.
Mescolare delicatamente e far riposare in frigo per 30 minuti.
Mescolare in una scodella la farina, lo zucchero e il sale.
Unire gli albumi, il burro lavorato a crema e mescolare fino ad ottenere un composto morbido e senza grumi.
Stendere su una placca foderata di carta forno piccole quantità di impasto, formando dei dischetti di circa 10 cm di diametro.
Cospargere i dischi con sesamo e papavero.
Cuocere in forno a 200°C per 4-6 minuti.
Appoggiare la placca sullo sportello aperto del forno per mantenere calde le cialde.
Prendere 8-10 stampi a forma di cono, avvolgere un disco di impasto attorno a ciascuno stampo, tenendo il lato spolverizzato di sesamo e papavero verso l'esterno e formare di piccoli coni.
Disporli sulla placca da forno e infornarli nuovamente per 6-8 minuti.
Toglierli dal forno e rimuovere delicatamente gli stampi.
Quando i coni saranno freddi, farcirli con la tartare e le uova di salmone.
Disporli su un piatto di portata e servire.



COZZE GRATINATE


INGREDIENTI:
10 cozze giganti
200 g pangrattato
senza glutine
200 g burro
salsa di pomodoro

Far aprire le cozze in una padella a fuoco vivo.
Togliere la valva a cui non è attaccato il mollusco.
Fondere il burro in una padella e unirlo al pangrattato, amalgamando bene.
Coprire le cozze con il composto di pane e burro, creando uno strato compatto.
Versare un cucchiaino di salsa di pomodoro su ogni cozza.
Gratinare per 10 minuti, poi servire.


BUDINO ALL'ARANCIA CON SALSA AL CIOCCOLATO


INGREDIENTI:
3 uova
80 g farina senza glutine
50 g zucchero
500 ml latte
200 ml succo di arance bionde
scaglie di cioccolato fondente per decorare
moscato secco per gli stampi
Per la salsa al cioccolato
3 cucchiai di zucchero
1 cucchiaio di cacao amaro
1 cucchiaio di moscato secco
3 cucchiai di acqua


Sgusciare le uova in una casseruola.
Incorporare la farina e lo zucchero e mescolare bene.
Unire poco per volta il latte e il succo d'arancia e con una frusta amalgamare gli ingredienti.
Portare a cottura a fiamma moderata per circa 20 minuti o finché la crema non raggiunge una consistenza densa.
Spegnere la fiamma.
Bagnare da 4 a 6 stampini da budino con il moscato e versare in ciascuno un poco di crema, riempiendoli fino al bordo.
Lasciar raffreddare e porli in frigo per almeno 3 ore.
Per preparare la salsa, mescolare in un pentolino lo zucchero, il cacao e l'acqua.
Portare a ebollizione a fiamma dolce e lasciar cuocere per circa 5 minuti e infine aggiungere il moscato.
Spegnere la fiamma e tenere da parte.
Trascorso il tempo di raffreddamento, immergere velocemente gli stampi nell'acqua calda, passare delicatamente la lama non seghettata di un coltello sulle pareti interne degli stampini e capovolgere i budini nei piatti individuali.
Guarnire con un poco di salsa al cioccolato e decorare con scaglie di cioccolato fondente.

And since his birthday falls during the weekend, he has three days of festivities:

1. FRIDAY 14 - "Private" dinner

Like all the years since we are married, for my husband's birthday I organize, in addition to the celebrations with relatives and friends, a nice dinner for us.
This year, because of the length of the festivities, I thought to create a menu not too impressive, but also nice and tasty... it was a sort of homemade happyhour.


APERITIF
Tintoretto

APPETIZERS
Blinis with smoked salmon
Bass tartare in sesame and poppy cones
Mussels au gratin

DESSERT
Orange pudding with chocolate sauce


N.B. All the recipes are for 4 people ... we were in two, but I thought "And if my husband is very hungry ???!!!"


TINTORETTO

INGREDIENTS:
250 ml pomegranate juice (3/10)
550 ml sparkling brut wine (7/10)


Cut the pomegranate in half and squeeze it.
Let the juice rest for 10/15 minutes.
Combine the pomegranate juice with cold sparkling brut wine and serve in flùte.


BLINIS WITH SMOKED SALMON

INGREDIENTS:
300 g smoked salmon cut into thin slices
1 tablespoon honey with delicate flavor
juice of half a lemon
10 g yeast
80 ml milk
60 g gluten free flour
1 tablespoon sugar
1 yolk
1 egg white
30 g butter
salt
dill


Put smoked salmon slices in a bowl and season with honey and lemon juice.
Let them rest in refrigerator while proceeding with the preparation of blinis.
Dissolve yeast in warm milk, combine flour, sugar, yolk, a pinch of salt, mix well and let it rest for 30 minutes in a warm place.
After this time, incorporate 20 g of butter and the cold egg white mounted a steady snow.
In a small not sticky pan melt the remaining butter and pour a small amount of dough, forming discs of about 8 cm in diameter.
Not cook too many at the same time.
When the mixture is slightly thickened and forms small bubbles on the surface, turn the blinis and cook them on the other side.
Let them cool.
Arrange the blinis on a serving dish, garnish each with a slice of salmon marinated in honey and decorate with dill.


BASS TARTARE IN SESAME AND POPPY CONES

INGREDIENTS:
200 g fresh bass cut into thin slices
2 tablespoons of salmon eggs
1 onion
the juice of half orange
1 teaspoon extra virgin olive oil
6 tablespoons gluten free flour
1 tablespoons and 1/2 sugar
2 egg whites cold
80 g butter at room temperature
2 tablespoons sesame seeds
2 tablespoons poppy seeds
salt
pepper in grains


Place slices of bass in a bowl, add washed and chopped onion, orange juice, oil, salt and ground pepper.
Stir gently and let it rest in refrigerator for 30 minutes.
Mix in a bowl flour, sugar and salt.
Combine egg and butter and stir to make a soft dough without lumps.
Cover a tin with paper for oven and put small amounts of dough, forming disks of about 10 cm in diameter.
Sprinkle the discs with sesame and poppy seeds.
Bake them in the oven at 200°C for 4-6 minutes.
Lay tin on the open oven door to keep the pods hot.
Take 8-10 molds in the shape of a cone, wrap the disc uf dough around each mold, taking the side with sesame and poppy outwards and forming small cones.
Place on on the tin and put in the oven again for 6-8 minutes.
Remove them from oven and gently remove the molds.
When the cones will be cold, stuff them with tartare and salmon eggs.
Place on a serving dish and serve.


MUSSELS AU GRATIN


INGREDIENTS:
10 giants mussels
200 g gluten free breadcrumbs
200 g butter
tomato sauce


Let mussels open in a pan on a high flame.
Remove the valve that don't have the mollusc.
Melt butter in a pan and add it to breadcrumbs, mixing well.
Cover mussels with the mixture of bread and butter, creating a compact layer.
Pour a spoon of tomato sauce on each mussel.
Grill for 10 minutes, then serve.


ORANGE PUDDING WITH CHOCOLATE SAUCE

INGREDIENTS:
3 eggs
80 g gluten free flour
50 g sugar
500 ml milk
200 ml of orange juice
flakes of dark chocolate to decorate
moscato dry for molds
For the chocolate sauce
3 tablespoons sugar
1 tablespoon cocoa powder
1 tablespoon moscato dry
3 tablespoons water


Shell eggs in a saucepan.
Add flour and sugar and mix well.
Combine milk and orange juice with a whip and mix the ingredients.
Bring on a moderate flame, cooking for about 20 minutes or until the cream does not reach a thick consistency.
Turn off the flame.
Soak 4 to 6 pudding molds with moscato and pour in each some spoons of cream, filling them up to the brim.
Let them cool and place in the refrigerator for at least 3 hours.
Prepare the sauce: in a saucepan mix sugar, cocoa and water.
Bring to boil on a sweet flame and cook for about 5 minutes and then add moscato dry.
Turn off the flame and keep it aside.
After cooling time, quickly dip the mold in hot water, gently move the blade of a knife on the inner walls of molds and turn the puddings in individual dishes.
Garnish with a little sauce and decorate with flakes of dark chocolate.

BISCOTTI PER BABBO NATALE

In questo periodo nella blogsfera la produzione di biscotti per Natale è veramente enorme: ormai non si contano più le ricette di delizie speziate, cioccolatose, semplici semplici, tipiche regionali,..



In più ci si mette Food Blogga, che indice il blog event "Eat Christmas Cookies"...


E' giunto il momento per me di postare una ricettina biscottosa!

BISCOTTI CIOCCO-MENTA



INGREDIENTI:
110 g burro, a temperatura ambiente
75 g di zucchero a velo
3 cucchiai di sciroppo alla menta
1/2 cucchiaino di estratto di vaniglia
1 albume d'uovo
140 g farina
1/4 di cucchiaino di sale
60 g gocce di cioccolato


In una ciotola, con uno sbattitore, amalgamare il burro, lo zucchero a velo, lo sciroppo alla menta e l'estratto di vaniglia fino ad ottenere un composto omogeneo.
Aggiungere l'albume d'uovo e mescolare fino ad incorporato.
Unire alla miscela la farina, il sale e le gocce di cioccolato.
Distribuire due cucchiaiate di impasto negli stampi da cookies imburrati e infarinati (o su una placca da forno coperta di carta forno, distanziandoli di almeno 5 cm).
Cuocere in forno a 150°C per 10 a 12 minuti, fino a quando i biscotti saranno consistenti al tatto e i bordi avranno appena iniziato a dorarsi.
Trasferire i biscotti su una gratella a raffreddare, poi spolverarli con zucchero a velo.

COOKIES FOR SANTA

During this period in in the foodblogs the production of cookies for Christmas is truly huge: there is an incredible number of recipes of spicy, chocolate, simple, typical regional...cookies.
In addition Food Blogga organized "Eat Christmas Cookies"...


So, it's the time for me to post a cookies recipe!

CHOCOLATE&MINT COOKIES


INGREDIENTS:
1 cup (1/2 lb.) butter, at room temperature
1 1/4 cups powdered sugar

1/2 teaspoon peppermint extract

1/2 teaspoon vanilla

2 large egg whites

2 cups all-purpose flour

1/4 teaspoon salt

2/3 cup miniature chocolate chips or 4 ounces bittersweet chocolate, chopped



In a bowl, with a mixer on high speed, beat butter, powdered sugar, peppermint extract, and vanilla until well blended.
Beat in egg whites until incorporated.
Reduce speed and mix in flour, salt, and chocolate chips.
Spread two tablespoons of mixture in the cookie molds anointed and floured (or on a cookie sheet, space them of at least 5 cm).
Bake in a 300°F/150°C oven until cookies feel firm to touch and are barely beginning to turn golden on the edges, 10 to 12 minutes.
If baking more than one sheet at a time in one oven, switch positions halfway through baking.
Transfer cookies to racks to cool completely.

CI SONO ANCH'IO!

Non potevo non accettare l'invito al "Pranzo delle Feste" organizzato da Cuocapercaso e Coco.
E siccome non si va a mangiare dagli amici è buona educazione non presentarsi mai a mani vuote, ho portato questa pasta:


LINGUINE CON CAVIALE E PORRI AL PROFUMO DI ARANCIA


INGREDIENTI per 4 persone:
320 g linguine senza glutine
2 l brodo vegetale
1 porro
1 carota
1 arancia
200 ml panna da cucina
25 g caviale
30 g burro
pepe bianco
sale

Lavare l'arancia e ricavare metà della parte arancione della scorza; spellare la carota.
Tagliare la scorza di arancia e la carota a listarelle sottili.
Scottare la scorza d'arancia per qualche istante in acqua bollente.
Pulire il porro e dividerlo in striscioline.
Farle stufare insieme alla carota con il burro in una padella; salare e mescolare.
Unire il succo dell'arancia, farlo ridurre della metà, aggiungere la panna e metà del caviale, regolare di sale e pepe e spegnere il fuoco.
Cuocere le linguine nel brodo bollente, scolarle lasciandole umide, versarle nella padella con il sugo ben caldo, mescolare, suddividere nei piatti e completare con le scorzette d'arancia e il caviale rimanente.


ENGLISH VERSION:

I took this dough:

ORANGE SCENTED LINGUINE WITH LEEKS AND CAVIAR


Ingredients for 4 persons:
320 g gluten-free linguine

2 l vegetable broth

1 leek

1 carrot

1 orange

200 ml cream

25 g caviar

30 g butter

white pepper

salt

Wash the orange and extract half of the orange peel; peel the carrot.
Cut the orange peel and the carrot in thin strips.
Boil the orange peel for a few seconds in boiling water.
Clean the leek and divide it into strips.
Cook it with the carrot and butter in a pan, salt and stir.
Combine the orange juice, reduce it by half, add the cream and half of the caviar, add salt and pepper and turn off the fire.
Cook the linguine in boiling broth, drain leaving them wet, put them in the pan with the hot sauce, mix and put in dishes; complete with the boiled orange peel and the remaining caviar.

UN BEL DOLCE...ASPETTANDO IL NATALE CON FRANCESCAV

Oggi vi propongo un dolce natalizio della tradizione di Trentino Alto Adige e Austria, quello che si trova tipicamente nei mercatini di Natale (oltre ai Lebkuken, i classici biscottoni speziati): lo Zelten.


Il suo nome risale al termine tedesco “selten” (talvolta) inteso a sottolineare l’eccezionalità della sua preparazione che avviene nel periodo di Natale.
Tipico dolce di frutta, la sua usanza è diffusa in tutto il Trentino Alto Adige e il Tirolo, motivo per cui è difficile codificare una ricetta canonica, dato la varietà degli ingredienti che cambiano da valle a valle e quasi da famiglia a famiglia.
Una base comune si rintraccia nella presenza nell’impasto di farina (un tempo di segale), uova, burro, zucchero, lievito e noci, fichi secchi, mandorle, pinoli e uva sultanina. Lo zelten assume varie forme: a cuore, ovale, rettangolare.
Per tradizione tutti i membri della famiglia dovevano portare il loro aiuto nella preparazione del dolce, che veniva mangiato solo una volta rientrati dalla messa di mezzanotte, come gesto di ringraziamento per il cibo donato alla famiglia.
Questo dolce partecipa all'iniziativa di Francescav "Aspettando Natale 2007".


Ma ecco la ricetta, ovviamente in versione gluten-free:


ZELTEN TIROLESE


INGREDIENTI:
200 g farina senza glutine
100 g noci
150 g fichi secchi
75 g pinoli
100 g uvetta
100 g datteri denocciolati
100 g cedro candito
100 g zucchero
4 cucchiai di miele + un po' per guarnire
1 bicchierino di grappa
60 g burro
1/2 bustina di lievito
poco latte
sale
1 cucchiaino di cannella in polvere
1/2 cucchiaino di chiodi di garofano in polvere
mandorle per guarnire
ciliegie candite per guarnire


In una terrina sbattere il burro e lo zucchero, poi unire la farina, il lievito, un pizzico di sale e quindi, mescolando con un cucchiaio di legno, del latte, in modo da ottenere un impasto omogeneo.
Aggiungere poi le noci a pezzetti, i fichi e i datteri sminuzzati, i pinoli interi, l'uvetta, il cedro candito, le spezie, il miele e la grappa.
Lavorare bene il tutto e trasferirlo in una teglia unta e infarinata: stendere la pasta con le mani per uno spessore di circa 1 cm.
Mettere in forno a 190°C per circa 40 minuti, sfornando quando la superficie dello zelten avrà raggiunto un bel colore bruno.
Lasciar raffreddare, poi cospargere la superficie di miele, eventualmente riscaldato in un pentolino per renderlo più fluido, e decorare con ciliegie candite tagliate a metà e mandorle.
E' più buono se mangiato il giorno dopo...il problema è resistere!

Today I propose you a Christmas cake of Trentino Alto Adige and Austria, which is typically in the Christmas markets (in addition to Lebkuken, classic spicy cookies): Zelten.
Its name drifts to German term "selten" (sometimes) to highlight the exceptional nature of its preparation that takes place around Christmas.
Typical fruit cake, its habit has spread across Trentino Alto Adige and Tyrol, which is why it is difficult to codify a canonical recipe, since the variety of ingredients that vary from valley to valley and almost from family to family.
A common basis is tracking in the presence of flour (in the past rye flour), eggs, butter, sugar, yeast and nuts, figs, almonds, pine nuts and raisins. The zelten takes various forms: heart, oval, rectangular.
Traditionally, all the family members had to help in the preparation of the cake, which was eaten only once returned from the church in the Christmas night, as a gesture of thanks for the food donated to the family.
This cake participate to the Francescav's initiative "Waiting for Christmas 2007".

This is my recipe, obviously gluten-free:

ZELTEN OF TYROLO



INGREDIENTS:
200 g gluten-free flour

100 g walnuts

150 g dried figs

75 g pine nuts

100 g raisins

100 g dates without core

100 g candied citron

100 g sugar

4 tablespoons honey + a bit for garnish

1 glass of grappa

60 g butter

1/2 packet of baking powder

little milk

salt

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

almonds for garnish

candied cherries for garnish


In a bowl beat butter and  sugar, then add flour, baking powder, a pinch of salt and then, stirring with a wooden spoon, milk, in order to obtain a homogeneous mixture.
Add chopped nuts, figs and dates broken into tiny pieces, the whole pine nuts, raisins, candied citron, spices, honey and grappa.
Mix very good and transfer it in an anointed and floured pan: stretch the dough with your hands to a thickness of about 1 cm.
Put in the oven at 190°C for about 40 minutes, until the zelten's surface reaches a nice brown color.
Let it cool, then sprinkle the surface of honey, heated in a saucepan to make it more fluid, and decorate with candied cherries cut in half and almonds.
It is better if eaten the day after...the problem is to resist!

UNA RICETTA "GODURIOSA"

Questo è uno di quei piatti che ho sempre desiderato assaggiare in quei ristorantini rustici di montagna, ma che, trattandosi di pasta, mi è sempre stato impedito dalla mia celiachia.
Il cinghiale...così buono, ma così difficile da trovare in una qualsiasi macelleria della mia zona...l'idea di preparare un ragù con questa carne sembrava quasi impossibile...
Ma un giorno ho sguinzagliato la mia suocera preferita (e fortunatamente anche l'unica), che ha finalmente scovato il tanto sospirato ingrediente!!!
E quindi...


RAGÙ DI CINGHIALE


INGREDIENTI per 6 persone:
60 g burro
1 cipolla, tritata finemente
1 gambo di sedano, tritato finemente
1 carota, tritata finemente
450 g carne di cinghiale macinata
1 pizzico di noce moscata
4 bacche di ginepro
1 pizzico di rosmarino
125 ml vino rosso
185 g latte
400 g pomodori pelati a pezzi, in scatola
250 ml brodo di carne
sale
pepe


Fondere il burro in una casseruola e aggiungere la cipolla, il sedano e la carota.
Cuocere a fuoco medio per 6-8 minuti, mescolando di tanto in tanto.
Aggiungere la carne di cinghiale, le bacche di ginepro, la noce moscata, il rosmarino, sale e pepe.
Cuocere per 5 minuti, o fino a quando la carne cambierà colore, senza rosolarsi.
Versare il vin nella casseruola, alzare la fiamma e cuocere a fuoco vivo per 2-3 minuti, o fino a quando si sarà assorbito.
Mescolando, unire il latte, abbassare il fuoco e far bollire lentamente per 10 minuti.
Aggiungere i pelati e metà del brodo, coprire parzialmente la casseruola e lasciar bollire dolcemente a fuoco molto lento per 3 ore.
Aggiungere un po' di brodo, se serve a non far asciugare il sugo.


Io l'ho usato per condire una parte di quei pici che avevo preparato tempo fa e congelato.
Buonissimo!!! Veramente un piatto "godurioso"!!!

This is one of those dishes that I always wanted to eat in one of those beautiful rustic mountain restaurants, but that being pasta, I always can't eat because of my celiac disease. The wild boar...so good, but so difficult to find in any butcher of my area...the idea of preparing a ragout with this meat seemed almost impossible ... But one day I asked a help to my favorite mother-in-law (and fortunately the only), which has finally finded the much longed ingredient! And so...


WILD BOAR RAGOUT


INGREDIENTS for 6 persons:
60 g butter

1 onion, finely chopped

1 celery stalk , finely chopped

1 carrot, finely chopped

450 g minced meat of wild boar

1 pinch of nutmeg

4 juniper berries

1 pinch of rosemary

125 ml red wine

185 g milk

400 g canned peeled tomatoes into pieces

250 ml meat broth

salt

pepper



Melt the butter in a saucepan and add onion, celery and carrot.
Cook at medium heat for 6-8 minutes, stirring occasionally.
Add wild boar meat, juniper berries, nutmeg, rosemary, salt and pepper.
Bake for 5 minutes, or until the flesh color change without cook.
Pour the wine in the saucepan, raise the heat and cook on a high flame for 2-3 minutes, or until it is absorbed.
Mixing, combine milk, lower the heat and let simmer for 10 minutes.
Add the peeled tomatoes and half of the broth, partially cover the pot and let boil gently on very slow fire for 3 hours.
Add a little broth if needed not to dry the sauce.


I used it to dress a part of those "pici" (a kind of pasta tipical of the central regions of Italy) who I prepared and frozen time ago.

IL PRANZO DEL SABATO

Ecco un pranzetto rustico e gustoso, che ho sperimentato sabato scorso, in montagna, in una fredda giornata passata davanti al caminetto.

PRIMO
Risotto all'acquavite di pera con formaggio nostrano e speck croccante

SECONDO
Involtini di verza con cipolla caramellata

N.B. Tutti gli ingredienti sono per 2 persone.

RISOTTO ALL'ACQUAVITE DI PERA CON FORMAGGIO NOSTRANO E SPECK CROCCANTE


INGREDIENTI:
150 g riso arborio
1/2 bicchierino di acquavite di pera
50 g formaggio nostrano stagionato
50 g speck affettato
1/2 cipolla rossa
olio extravergine d’oliva
brodo


Tritare finemente la cipolla e farla appassire in una casseruola con 2 cucchiai d'olio, poi versare il riso e farlo tostare.
Bagnare con l'acquavite, alzare leggermente la fiamma e far evaporare, continuando a mescolare.
Irrorare con il brodo bollente, mescolare bene e portare il risotto a cottura.
Tagliare lo speck a striscioline sottili e saltarlo in una padella antiaderente fino a renderlo croccante.
Aggiungere al risotto il formaggio tagliato a dadini e mescolare fino a quando si sarà sciolto, quindi unire lo speck croccante, mescolare e servire.


INVOLTINI DI VERZA CON CIPOLLA CARAMELLATA


INGREDIENTI:
200 g patate lessate
120 g mortadella
100 g cipolla rossa
4 foglie di verza
2 cucchiai di latte
20 g grana padano grattugiato
noce moscata
1 cucchiaio di zucchero di canna
il succo di 1/2 arancia
1 cucchiaio d'olio extravergine d'oliva
sale
pepe


Tagliare la cipolla a fette, metterla in una padella con l'olio, lasciare soffriggere per 5 minuti, salare, cuocere per altri 5 minuti e unire lo zucchero di canna, quindi alzare la fiamma e far caramellare.
Aggiungere il succo d'arancia e dopo 2 minuti spegnere il fuoco.
Privare le foglie di verza della costa centrale, lessarle per 2 minuti in acqua bollente salata, scolarle e asciugarle.
Tagliare la mortadella a dadini, frullarla con il latte, poi unire il composto alle patate lessate schiacciate con lo schiacciapatate e insaporite con il grana, sale, pepe e noce moscata.
Farcire le foglie di verza con due cucchiai di composto, chiudere a involtino e infornare su una placca foderata di carta da forno a 160°C per 25 minuti, coprendo con la carta da forno umida per non far asciugare troppo gli involtini.
Sfornarli e servirli con la cipolla caramellata.

Here is a rustic and tasty lunch that I experienced last Saturday, in the mountains, on a cold day in front of the fireplace.

FIRST COURSE
Risotto with pear brandy, seasoned cheese and crispy bacon

SECOND COURSE

Cabbage roulades with caramelized onion

NB All the ingredients are for 2 persons.


RISOTTO WITH PEAR BRANDY, SEASONED CHEESE AND CRISPY SPECK

INGREDIENTS:
150 g arborio rice
1/2 cup of pear brandy
50 g seasoned cheese
50 g sliced speck
1/2 red onion
extra virgin olive oil
broth


Finely chop the onion and dried it in a saucepan with 2 tablespoons of oil, then pour the rice and toast it.
Soak with the brandy, slightly raise the flame and let it evaporate, continuing to stir.
Add the boiling broth, stir well and bring the risotto cooked.
Cut speck in thin strips and cook it in a pan to make it crispy.
Add the cheese cut into cubes in the risotto and stir until dissolved, then add the bacon crisp, stir and serve.


CABBAGE ROULADES WITH CARAMELIZED ONION

INGREDIENTS:

200 g boiled potatoes
120 g mortadella
100 g red onion
4 leaves of cabbage
2 tablespoons milk
20 g grated grana padano
nutmeg
1 tablespoon cane sugar
juice of 1/2 orange
1 tablespoon of extra-virgin olive oil
salt
pepper


Cut onion into slices, put them into a pan with the oil, fry for 5 minutes, salt, cook for another 5 minutes and add cane sugar, then raise the flame and to caramelise.
Add the orange juice and after 2 minutes turn off the fire.
Deprive cabbage leaves from the central coast, boil them for 2 minutes in boiling salted water, drain and dry.
Cut mortadella into cubes, put in a blender with milk, then add the mixture to the boiled potatoes crushed and flavored with the grana padano, salt, pepper and nutmeg.
Stuff cabbage leaves with two tablespoons of compound, close to roulade and put in the oven in a tin with paper for oven at 160 ° C for 25 minutes, covered with damp paper for oven for not too dry the roulades.
Serve with caramelized onion.
