WBD - AFTER HOURS PARTY

Per il "World Bread Day" il mondo dei foodblogger ha prodotto una lunga serie di invitanti ricette di pane&co.
Ma la produzione continua:


Ogni partecipante all'evento è invitato a provare alcune delle ricette proposte.
Devo dire che c'era veramente l'imbarazzo della scelta...
Alla fine ho scelto un pane non nel senso letterale del termine, aggirando il problema principale del pane senza glutine; si può quasi definire un cake, ma è comunque molto invitante!
La ricetta originale è di Hanna di "BitterSweet".


BUTTERSCOTCH PUDDING BREAD – a modo mio


INGREDIENTI:
250 ml latte
1 cucchiaino di aceto di mele
200 g zucchero
60 ml olio extravergine d’oliva
1 cucchiaino di estratto di vaniglia *
280 g farina senza glutine
1 Pacchetto di Preparato per Crema da Tavola alla Vaniglia **
1/2 cucchiaino lievito per dolci
1 cucchiaino di bicarbonato
1/2 cucchiaino di sale
90 g gocce di cioccolato


* La ricetta originale prevede l’olio di canola, ma…io sono italiana!!!

** La ricetta originale prevede “Instant Butterscotch Pudding”, ma in Italia non l’ho mai visto…


Preriscaldate il forno a 180°C e imburrate e infarinate uno stampo da plum cake.
Unire latte e aceto e lasciar riposare il miscuglio per alcuni minuti.
Sbattere quindi con la frusta elettrica fino a che non diventa un impasto spumoso.
Poi aggiungere zucchero e olio, continuando a mescolare.
In una ciotola, amalgamare la farina, il preparato per crema da tavola alla vaniglia, il bicarbonato, il Baking Soda e il sale.
Lentamente incorporare gli ingredienti liquidi in quelli secchi, mescolando con cura. Infine aggiungere le gocce di cioccolato e mescolare.
Versare il composto nello stampo preparato e cuocere per 45-50 minuti, fino a che la superficie si dorata e uno stuzzicadenti inserito nel centro ne esca pulito.
Lasciar riposare per almeno 15 minuti prima di passarlo su una gratella a raffreddare.

For the "World Bread Day" the world of foodblogger has produced a long list of inviting recipes bread & co.
But production continues:


Each participant is invited to the event to try some of the recipes proposals.
I must say that it was really difficult to choice ...
At the end I chose a bread not in the literal sense of the word, bypassing the problem of bread without gluten; it can be almost a cake, but it is very inviting!
The original recipe is posted by Hanna from "BitterSweet".



BUTTERSCOTCH PUDDING BREAD – my way


INGREDIENTS:
1 Cup milk
1 teaspoon apple cider vinegar
1 Cup granulated sugar
1/4 Cup extra virgin olive oil °
1 Teaspoon vanilla extract
2 Cups gluten-free flour
1 3.5-Ounce package Instant Vanilla Table Cream °°
1/2 Teaspoon baking soda
1 Teaspoon baking powder
1/2 Teaspoon salt
1/2 Cup chocolate chips


°° The original recipe provides canola oil, but… I am Italian!

°° The original recipe provides "Instant Butterscotch Pudding", but in Italy I've never seen it…


Preheat your oven to 350 degrees and liberally grease a medium loaf pan.
Combine the soymilk and vinegar and let the mixture stand for a few minutes to curdle.

Use your stand or hand mixer to mix it on a high speed, until it becomes nice and frothy.

Then add in your sugar and oil, mixing again to combine.

In a separate bowl, sift together the flour, pudding mix, baking soda and powder, and salt. Slowly incorporate these dry ingredients into the wet, pausing so that the mixer can process everything.
Finally, toss in your chocolate chips and stir to distribute.

Pour your batter into the prepared loaf pan and bake for 45 - 50 minutes, until golden brown on the outside and a toothpick inserted into the center comes out clean.
Let the loaf rest for at least 15 minutes before moving it to a cooling rack.

Molto interessante, e very british. Avevo acquistato l'aroma al butterscotch alcuni anni fa a Londra e non sapendo cosa farne lo avevo usato per aromatizzare torte e dolci. Avessi avuto questa ricetta!!

Thanks for giving my recipe a shot! Even though you couldn't find butterscotch pudding mix, I still hope that you enjoyed the end result. It sure does look good! :)
