BISCOTTI ALL'ARANCIA E CIOCCOLATO

INGREDIENTI per circa 30 pezzi:
300 g farina senza glutine
40 g scorza d'arancia candita
1 cucchiaino di buccia d'arancia grattugiata
175 g burro
100 g zucchero a velo
1 uovo
100 g mandorle tritate
sale
Per la glassa:
100 g cioccolato fondente
1 cucchiaio di olio extravergine d'oliva
Per la farcitura:
100 g confettura di arance
2 cucchiai di liquore all'arancia

ENGLISH VERSION:

In my family we don't celebrate evening of Christmas Eve, but we just have a huge lunch on Christmas Day.
But since few years with my parents-in-law and my husband's sister, we are using to meet after Christmas Eve's dinner and spend the night with mulled wine, pastry and table games.

And also this year.
During the grueling match we ate cookies and drunk mulled wine and Christmas tea.

Here are the pastries I prepared:

ORANGE AND CHOCOLATE COOKIES

INGREDIENTS for about 30 pieces:
300 g gluten free flour

40 g candied orange peel
1 teaspoon grated orange peel
175 g butter

100 g icing sugar

1 egg

100 g chopped almonds

salt

For the icing:

100 g dark chocolate

1 tablespoon extra virgin olive oil
For the stuffing:
100 g orange jam

2 tablespoons orange liquor

To decorate:

candied orange peel

Reduce candied orange peel into small pieces and mix it with grated peel.
Work softened butter with sugar, then add the egg, stirring.

Add the candied orange peel and grated peel, flour, a pinch of salt and almonds and work up to get a smooth dough.

Form a ball, cover with p
lastic wrap and leave to rest in the refrigerator for at least 30 minutes. On a floured work plan stretch the dough to a thickness of 3 mm, with a cutter trim cookies and place on plate lined of paper for oven.
Cook in oven at 180°C (if you use ventilated oven, just heat at 160°C) for 15-18 minutes.
Remove them from the oven and let them cool.
Dissolve fragmented chocolate in water bath with oil, continuing to mix until having a smooth glaze.

Stir jam with liquor.

Put some jam on the bottom of cookies, then bundle them two by two.

Immerse one side of cookies in icing chocolate and then make them drip and, while the icing is still warm, decorate with chopped candied orange; let them dry for at least 2 hours and keep them in a cool and dry place.

COCONUT AND SPICY COOKIES

INGREDIENTS for about 45 biscuits:
300 g gluten free flour

200 g butter
200 g white chocolate
100 g sugar

120 g grated coconut

2 tablespoons of gingerbread spices
1 egg salt

In a bowl mix cream butter with sugar, then incorporate the egg and transfer the mixture into a bowl containing the flour mixed with 100 g of grated coconut and a pinch of salt.
Mix ingredients with care until having a homogeneous paste, cover with plastic wrap and let it rest in the refrigerator for at least 1 hour.

After this time, from the dough derive balls large as a walnut and work them giving the form of sticks about 5 cm long.

Fold ends of cookies in order to obtain a"C" shape; put them on a plate lined of paper for oven.

Bake cookies in the oven at 180°C (if you use the ventilated oven, just heat at 160°C) for about 25 minutes, then remove from the oven and let them cool.
Meanwhile dissolve white chocolate in water bath.
When cookies are cold, put ends first in chocolate and then in the remaining grated coconut.
